Great idea using that meat tenderizer for the wings. Did you notice if it really helped though? That smokehouse bayou sauce looked like something I need to try!!! I'll steer clear of that spicy stuff though. Cool editing effect at the end with smoke around your head from the heat! Cheers to ya brother Rus!!!!

Thanks Troy! That is actually a trick a few BBQ competition guys do to give the skin a good bite through. Most will remove the thigh skin and scrape it, but I've seen this done as well. It works for sure. This skin was perfect even though it was sauced heavily. LOL about the smoke effect. I like having fun when editing so you never know what may pop up haha. Cheers brother!

On my way back to Idaho, we stopped in Carson City, NV and found a great bbq place where I had my first smoked chicken wing. They were the nest wings I've ever had so I am especially interested making these. Thank you for the perfect vid at the perfect time Rus!!!

Yes any electric smoker that can hold low temps will work including pellet smokers

I've seen that Jaccard thing once before, man. Didn't give it a second thought then, but now I want one! I never would have thought you could smoke wings- ANY poultry really- that low and slow without tough, rubbery skin. I always go hot and fast for that reason, but now I'm going to grab me one of those and try a nice long smoke on some wings. They looked fantastic brother.

Russ first I wished my facial hair looked as good as yours...I'm 62 but can not seem to get that look. You look great! This cooking method looks interesting, I do prefer a faster method...because I am hungry. So which is better...fast or slow? Also, have you ever tried a sauce that had bourbon and raspberries in it? spice it how you like...think I had that in Atlanta, then made my own. It is kind of neat using Wild Turkey 120. There are so many sauces, but infused with those ingredients I really liked...I think the place in Atlanta had a special on Tuesdays....get twice as much for price of one dish. It's great to see more from you.

I think the low and slow is better on any BBQ but I also realize not everyone wants to spend that long cooking wings, but since I enjoy sitting outside while smoking meats, it’s my preferred method. Never had the sauce. Not a huge fan of raspberries, but I do like the bourbon. Thanks for watching

Hi Russ!! Wings looked great. I have found the jacquard works great and I have also been setting the wings, with a little kosher salt on both sides on a rack inside the refrigerator for at least overnight.

Seems to crisp the skin up no matter if I cook low and slow or a little hotter. I have watched you for years and between you, Arnietex, Malcom, and Troy you guys have pretty much helped shape the way I BBQ!! Thanks!!!

Yeah, salting and putting in the fridge helps big time on the skin but I have found that smoking longer at lower temps really helps in completely separating the meat from the bone but still leaving it moist and tender while also giving the skin a clean bite through.

im 58 but it was not until about age 50 or so, that i realized theres the “flats” and “drummies”. because i prefer the flats, over the drummies, and would ask for the “forearm” vs the “upper arm” whenever i got them at a restaurant, and someone finally said “its flats and drummies, or drumetts” so now i know.

Yeah I don't think I really knew the proper terms either way back when I cooked wings. We just called them wings and cooked them in tact. I still do them that way occasionally

Absolutely. The LSG pellet grill can get into those low temps when needed

Does the bayou dust have salt in it? Usually when I used a rub with salt in it and then used a buffalo sauce, which usually has a lot of sodium, wings turn out very salty. I skip salt in the rub now

I'm sure it has some salt, but the flavor of these were on point with no over saltiness what so ever. Most rubs do have some salt to bring out the flavor, and it's normally labeled salt free or low salt if it is salt free or low salt. I will say that some companies add way to much salt. More of a way of saving a buck, but the Bayou Dust doesn't fall into that category at all.

Oh yes, absolutely. Any smoker that can hold that low temp easily will work. My pellet smoker is not at our set yet, but eventually will be along with the Gateway

Hmm, those looked damn good. Don't have that smoker but might try that on the pellet grill. Have had good luck with the hot and fast method but there is no smoke, these looked like they would have had that smoky goodness I'm after. Nice video, liked the smoke effects. Thanks Rus!

Believe it or not, these are the party wings from Walmart. I didn't even look to see what company processes them, but they were plenty meaty for sure.

Absolutely. You want to fully thaw any meat before cooking, other wise you are going to over cook the outside before the inside is fully cooked. I assume everyone would know this but I guess not

I'll marinate my wings overnight in Italian dressing, then low and slow them in my ugly drum smoker and sauce them at the end, for those who want sauce. Often, folks like them just they way they are. But beware the wing jerky! Yeah, we can screw up once in a while.

Yeah, it's hard to get real low temps on a drum smoker, but my Gateway is still one of my go to smokers. I need to use it soon. Miss cooking on it. Italian dressing is always a great choice to marinade many things. Including wild game. Thanks for watching
