Incomplete recipe ... where is the salt ? Where are the onions and herbs ? Chris knows what he's doing, but CBS did an incompetent job covering all the ingredients in the dish. -1.

Actually, salt in a meatloaf would toughen it.

Surprised he didn't brine it. On ATK they brine everything including salt water shrimp n fish.

Why would you NOT want it to stew in it's own juices??

To build a nice caramelized crust on all exposed sides of the loaf, mostly. Caramelization = additional flavor.

Never been a fan of Christopher Kimball. The America's Test Kitchen program is now so much better, friendlier and entertaining since his departure. He was just too much of a stuffed shirt. Sounds harsh, but it's true. Julia and Bridget, the replacement hosts, are so much fun to watch!

Ii watched a documentary on him and his company... cooks country, but something happened when corp he built may pushed him out or stole it from him...felt sad about that. Do like Bridgett and Julia as well
