Making 1 gallon of traditional mead with a tasting 12 months later
During the first 3 days give your musk a good stir, and to break up the fruit cap that will form if you are not using straining bags. Rack into secondary after 5 - 7 days, and continue to rack every 4-6 weeks until clear. Degas, back sweeten, bottle let age for at least 12 months total.

Some times the very simple is exactly what we need. Great to see a video that show a mead that didn’t ferment to dryness despite it having the potential, and that is left as is… because it’s good just like it is.

Awesome, I’ve got some traditional mead like this I started a month or so ago, long way to go. I followed instructions that came with the kit, the only real difference was the recipe has chopped up oranges left floating in the demijohn / carboy. Never done it before but it was dead simple like you say, so I did a second gallon with some of my homegrown rhubarb. All the best 👍

I admit that after a year, without back-sweetening, I probably wouldn't have bothered pasteurizing ... but I've been wrong before.

No, your correct. The sweetness level was okay, so pasteurizing won't be needed.

Did you use the Active Dry Yeast at 4:33 ? Also, how much longer do you have to ferment the mead using either?

There's a whole scene missing of my boiling the bread yeast and adding the cooled yeast to the mix. Although you could have used only the uncooked bread yeast for fermentation instead of as a yeast nutrient.

No it isnt, but the difference is small enough not to be an issue.

True. One US gallon is 3.78541184 litres, which you could round off to 3 litres and 785 millilitres. One UK gallon would be more: 4.54609 litres, which you could round off to 4 litres and 546 millilitres. Does it really latter that much? If you have a fermenter large enough and work off of the specific gravity instead of the volume of honey, water and/or the total of must, it wouldn’t.
