Describes the making of 1 gallon of apple cider mead with a tasting 12 months later.
Ingredients
1 gallon of apple cider
2 pounds of raw clover honey
1/4 lemon
1 teaspoon bread yeast
During the first 3 days give your musk a good stir, and to break up the fruit cap that will form if you are not using straining bags. Rack into secondary after 5 - 7 days, and continue to rack every 4-6 weeks until clear. Degas, back sweeten, bottle let age for at least 12 months total.

Nice looking Cyser! I added a cinnamon stick into secondary in my last cyser and it turned out very nice! Received a bronze medal at comp., my first for a mead! Thanks for the wonderful videos, keep up the great work!

Good stuff, Charles. I started a cyser about 6 weeks ago. Used home pressed cider. It is still really clouded up. Glad to see your's cleared so well. That's promising all it needs is more time.

the mead is a big ole miss for my climate.. After hearing you say all I like is mead now I just went to it first off.. ended up with some rubbery alcohols I'm waiting to fade away.. I do enjoy posting stuff that's mistakes just for you to catch! I have to say I love bucking your channel too! I am priming bottles before aging and I just got my first miniature cloud formation! It wasn't even three months old! How exciting!

so it was nearly 20 abv I'm back to the drawing board proofing twice seems to be a thing to accomplish 20 proof after topping off with 5 gallons I've always done country batches that are really big! Great channel can't wait to try this cider mine fell flat! Going to try to get a press next year!

oh.. by the way I did an apple jack and it has more apple flavor then the Cider!! This would technically be a mead too! An apple cider I think that's a cyser! Been studying thanks to this page! Going to apple jack people with a cider mix now :D

Nice job ! I'm surprised that your bread yeast did as well as it did with your gravity being as high as it was to start. At 1.120 your potential was about 15% and you stated that you finished at 12 1/2 I believe. I'm assuming that your yeast stalled at that point which should have left you with a nice residual sweetness. A little more age and I think things will round out pretty nicely. Be well and keep fermenting !! -- den

Would you say that it's worth the additional cost to use apple cider over a cheaper apple juice? I know cider tends to be a fair bit more pricey than juice in my area, and I wonder if those extra apple solids in the cider end up making much of a difference considering how clear the final product turned out.

What temperature is needed to keep fermentation going it’s getting colder and I’m trying to keep my wines and mead at an acceptable temperature for fermentation using a heater bath in a using a fish tank heater what is your input on this experiment.

I use a seedling mat to keep my beers at the right temps. It was super cheap and I use an inkbird temp controller.
