Recipe: Roasted Butternut Squash with Maple and Cayenne
Ingredients:
1 butternut squash, peeled, seeds removed, and cubed
1.5 tablespoons olive oil
2 teaspoons maple syrup
1/2 teaspoon black pepper
1 teaspoon kosher salt
1/4 teaspoon cayenne pepper
Instructions:
Preheat the oven to 425°F (220°C).
Peel the butternut squash with a vegetable peeler, cut it in half, scoop out the seeds, rinse the seeds, and cube the squash.
In a mixing bowl, combine olive oil, maple syrup, black pepper, kosher salt, and cayenne pepper.
Toss the cubed butternut squash in the maple and spice mixture until evenly coated.
Spread the coated butternut squash on a baking sheet.
Bake in the preheated oven for 15 minutes.
After 15 minutes, stir the squash to ensure even cooking.
Place it back in the oven for another 15 minutes or until the squash is soft and caramelized.
Once done, let it cool slightly before serving.
