I gotta be honest with you frozen prawns are the go even though its been soaked in some sort of preservative because fresh prawns will come out overcooked and wont produce the same texture once you deshell it to a tail on cutlet

The Pernod really does add a delightful flavor. The idea seemed weird to me initially - it’s an anise like flavor - but then I had this. So good. Can’t get touch of taste in the US so I used chicken bouillon powder- again tasty. Make stock from scratch if you have time and use salt to season instead. But stock cubes and bouillon powders and chicken soup base and such add a lot of flavor and especially if you’re using fresh proteins and vegetables and herbs your food is going to be healthy. Even Jacques Pepin uses stock cubes or base in his latest cooking from home series. It’s all good baby. Happy cooking everyone.

If you can get your hands on Hon- Dashi in your country, buy it and use it to season seafood/fish with it, very nice. It does have msg in it and ik some people fear it but it's fine if you're using it sparingly. Basically just like salt, except you get better overall flavour.

I was a cook on a cruise ship in Hawaii in 1993 and we cooked many items with different liquors. We made two shrimp dishes with Pernod wine. A garlic shrimp scampi with Pernod and this same style recipe but with marinara and sliced black olives doused in Pernod. Pernod has a licorice/fennel flavor that is just the bomb. It still is my favorite cooking alcohol today.

@@labarone8910 dude... You can tell if if it de-veined just by looking at them. The de-veining process includes the cutting open of the back to get to the "vein." When you see a shrimp that looks butterflied out after cooking, it was cleaned. If it is just a tube, it wasn't.

Yes, you could try a whole lot of other spirits. Brandy, for instance, or you could fake the flavour of pernod by frying the shrimp with a couple of star anise, then use vodka in place of pernod, and then remove the star anise before serving.

Same thoughts, but then, almost all fish recipes that have sauces include chicken stock, first because chicken stock is so falvoursome, it completements any sauce, second because when you add too much fish stock and reduce it the 'fishy' falvour becomes just too much, the 'fishy' the falvour is already there in the fish, in some sauces you would find equal amounts on fish stock and chicken stock, but almost all of the time the chicken stock is always there.
