I think Joe was moved by the fact that the contestant's passion is cooking, and not being tied to a desk job. Joe use to work in Wall Street and he hated it!! Joe quit his finance job and focused on a career based on his upbringing and passion...FOOD!!! Joe gave this guy a chance to pursue his dream in the food world. Love Joe!! He is human, and does have heart!!

Ramsay was breaking down his barriers and asked him to reveal his true self and pushed him to be honest with himself and everyone in the room. He wasn't being a bully, he wasn't being arrogant, he was helping one man realize how you can get in the way of yourself before anything.
