Because of the personality. These shows that have gotten really big (BwB, Joshua Weissman, Bon Appetit before it died, etc all have these different personalities to their show. J Kenji's videos are more on the instructional side, and doesn't have as much flair as the others do.

Duck and Lamb are soooooooooo underrated as meats to eat. I have had Beer-Can Chicken before(was amazing), but after seeing this, Ima have to try the duck with an IPA.

I love the idea of beer can chicken or duck...my only issue with it is that the beer can contains a thin layer of plastic (BPA liner) inside and coating outside. Idk about the health effects of letting that sit on the heat.

At my house we have a cast iron "beer can" thing where you just pour the beer into the cast iron "beer can" which eliminates having to actually use an aluminum can haha

Scott kan: Very good editing! Nice pacing, to-the-point and easy to follow. One request for future episodes: Add an overlay-popup with conversions. Like fahrenheit -> celcius, Pounds -> kg etc.

Hey guys, maybe an easier solution to your skin crisping would be to use the carving knife a bit earlier to carve up the 3/4 cooked duck into large pieces that can be given a skin down grilling for a few minutes as needed and allow the rest of meat to catch up by setting aside to rest away from heat ? Maybe it could be spatchcocked after cooking ? Some pieces closer to the bottom seemed to have gotten more heat than the top as well, remember the Peking Ducks got roasted in a much bigger oven with lots of airspace and reflective walls than the weber offers. Another benefit would be to roast the trimmed carcass for use in soups later.

Usually you will git like a grill basket wrap it in aluminum put your drunk chicken on it so the drippings will fall on the aluminum and use it to brush your bird with fat that’s collecting adding flavor but for the grill it just depends if you mind it getting a little messy or not if your using charcoal no big deal propane it’s a hassle to keep clean if you don’t clean it immediately after

That looks great I think you do a combo of both low for a few and raise the temp towards the end and see the results from all side. Low, hot and fast, and a combination of both great job I love when that bell rings

Questions: 1. Would you recommend a tray under the bird to collect the fats/juices running off it? 1a. If you did put a tray under the bird, could you use that rendered fat in a gravy or sauce? 2. Could/would you use the contents of the can (beer, fat, and juices) to make a sauce for the bird? WARNING: Kids, never drink from the can after the bird's done cooking. That's how you burn your mouth and tummy.

Don't collect the fat with the set up they use, you are asking for a grease fire. If you are using a setup that would have the stored drippings not touching hot coals you could %100 collect and use the drippings for another purpose as long as you bring it up to temp (first juices out might be rendered at a temperature that doesn't kill off everything bad).

nah the heat applied over a long time is what makes it crackle. A torch would only burn the surface before you rendered the fats under the skin.

I had my doubts about that skin getting crispy. I like their idea about increasing the heat. I think they should also allow more time for the breast to face the heat source. Or! use a smoker for even heating.

We used to call it "Chicken Up the Butt." 😜 I lived in Texas for 10 years. We used chickens and a stout or other strongly flavored beer. Pilsners and most lagers just aren't strong enough to lend any kind of flavor. Cheers!

For a similar yet crispy skin at home with a duck take a carving fork and poke holes all over the duck. Only poke on the skin and into the fat. Be careful not to poke the meat, put on a wire rack on a baking sheet and put it in the refrigerator overnight before cooking. It will let the fat render and give you crispy skin. I have personally done beer can duck several times and this is the best method at home.

You guys kinda figured it out at the end, but another way instead of higher heat my suggest is just caramelized by using the beer liquid after the first hour to formed the crispy skin on the final stages of the duck...

I have not tried it yet, but rotisserie chicken is super crispy fresh off my rotisserie... thinking I could do the same. And similarly to chicken stuff that bird with seasonings, garlic cloves, rosemary, thyme, salt, pepper, and of course season the outside with the kickn chicken seasoning from a big grilling company.🍸🍷🍶

So here's a question does it really matter what kinda beer you use personally I don't like beer but my borther and mother like Heineken beer could you use that type of beer??? Or dose it have to be a light or a ipa and if so what's the difference??

Look fantastic but my concern is that whether those cans are safe to heat up like that. Even though aluminum, they still have films printed upon their surface.

At 6:43 That 300 degree temperature is for the top. Actual temperature is about 50 degrees lower at the grate.

Line under the skin with some bacon. It lifts the skin away from the meat and adds fat. Works well with roast turkey.

The trick to getting crispy skin with beer can chicken is to rub it with oil before seasoning, else you get really dry, hard skin. Same might apply to duck.

I know this would require invention but... you want a vertically mounted rotisserie with the torch on the side and a heat source on the bottom to get the beer going. And then probably coat the exterior in something to accelerate the browning?

I don't know that much about duck doneness and how it compares to chicken but with the clips of the duck near the end, is it really safe? Like it looks kind of close to raw to me. Or is it just the lighting
