BTW I dont remember if I already said this, but I've been watching quite a few cooking channels since when I decided to learn to cook 10+ years ago (inspired by the famous movie director Robert Rodriguez words "not knowing how to cook is like not knowing how to f****). And your channel is firmly #1 by the % of dishes I actually make after watching. I've made more than half of them and so far never been disappointed. I love Spanish cuisine, I love Mediterranean cuisine and I love your simple, practical, delicious and healthy recipes.

This is the perfect timing for you to post this recipe! I recently got diagnosed with gastritis, and am on a strict elimination diet for a couple months to help. Everything in this recipe is gastritis safe (which trust me, is quite a feat!) except the tomato sauce and pepper. I also found a recipe for "tomato-free tomato sauce" which is made with other vegetables and beet root for color, so I will have to try this very soon! ♥ Thanks so much!

I used a no-tomato sauce I found on Pinterest. I can't remember exactly, but it was beets, sweet potato and carrot, plus some seasoning/acid of some sort. The texture was spot on. Taste was fine, but not as sharp as tomato sauce. I think I added some apple cider vinegar to sharpen the taste. It kept in my fridge for many weeks. I used a can of beets, drained, rather than a fresh beet and it came out just fine. Hoping your elimination diet gives you the answers you need and leads to a life free of gut pain.

OK, so I am late to the plate. This turned out very well! I used Brown rice so I cooked it for almost 30 minutes. I made no changes this time. It is amazing how much flavor the saffron adds. What a huge difference between fried and boiled zucchini! Like you said Albert, an "extra layer of flavor" without adding an extra ingredient.

Hi, my version includes some diced carrots and some sauteed mushrooms I add when the rice is half done. Sometimes I do add some grana padano cheese at the end. Saludos Alberto

@@Jb-uv6si Hi, don't make them too small and you can add them after the onion. Otherwise, you can do It with the tomato.

I adore chickpeas. This is such a great dish! BTW, I love your “poor man’s x” recipes. I’m a vegan, so your recipes appeal to me. I cook without oil, though. I used to be a fan of olive oil. I lost 15 lbs without trying just by parting with oils and other fats. I don’t miss them at all. And cleanup is a breeze.

Y'know, I started watching your channel because I didn't think I knew anything about Spanish cuisine. It turns out that Spanish food is really approachable and familiar. Which is really cool, but one my biggest takeaways from watching you cook is how to manipulate heat smartly in the midst of a recipe. It's not something you ever highlight in your commentary, but it's an important feature of every recipe you present. Keep up the good work!

Looks great, once again it's a recipe I'm going to make. I love vegetarian recipes even though I do eat meat. I have really begun to eat more chick peas since watching you and also have been using this brand of saffron, it really is the best in my opinion.

This looks good and I plan to make it for dinner this evening. I'll substitute barley for the rice though as it has a lower glycemic index and will make my doctor and nutritionist happy.😆 None of your recipes has ever disappointed me. As always, thanks.

I have never used saffron in a dish before other than St. Lucia buns, but I made this recipe tonight. Rather than using a white onion, I used some leeks which may have altered the flavor somewhat, but it was delicious. Very unique flavors!

I've read that ground turmeric makes a decent substitution. But, I have not tried it.

I've used turmeric in lieu of saffron on numerous recipes posted on this channel and it works well.

You can use turmeric powder to achieve the same color, but the flavor of saffron is one of a kind :) much love

Hi Alberto, delicious looking dish. Can’t wait to try it. I know you talk about this being an entrée dish. But could it also be served as a side dish? And, if so, what type of protein do you recommend? I was thinking of either grilled chicken thighs or fish. Thoughts? Thank you again for the video. Ciao!

Albert, thanks so much for this recipe! I have all the ingredients, except for the saffron, so I will substitute Bijol, which has annatto, ground cumin, and color. (I hope it works!) If you feel there's a better substitute, I'd appreciate your suggestions. Thanks again for making my family dinner menu planning so nutritious and easy!

I cant imagine myself having chickpeas with rice probably just different habits in different parts of the world ;) But I'm definitely gonna make this minus the chickpeas. I will probably add a carrot instead I love carrot with rice.

My rice takes 45 minutes to cook. Rice cooked in 15 minutes is still raw
