There is also one of the most common types of khachapuri - closed khachapuri Imeruli khachapuri with a lot of cheese inside, also very tasty.
Today I offer a recipe for Megruli khachapuri, which is a flatbread with cheese filling and an extra layer of cheese on top. Delicious, crispy, flavorful pastries and lots of cheese are really, really good!
What is a substitute for Sulguni cheese?
Khachapuri is traditionally made with different types of cheese - Imeruli and Sulguni, which are very popular in Georgia. It is also often made only from Sulguni cheese. But can these cheeses be substituted, or maybe there are similar cheeses that can be used instead? A great substitute for Sulguni cheese is low-moisture mozzarella, which can be mixed with feta or dry curd to make a filling for this delicious cheese flatbread.
Ingredients for two tortillas 25 cm in diameter.
For the dough:
Water (warm) - 150 g
Milk (warm) - 100 g (I have powdered milk diluted with water, I forgot to buy milk 😯)
Sugar - 15 g
Dry yeast - 8 g
Flour - 500 g + for working with dough
Unsalted butter - 40 g
Egg (large) - 1 pcs.
Salt - 7 g
Olive oil or sunflower oil - (to grease the bowl)
For stuffing:
Sulguni or mozzarella cheese - 800 g
To grease the flatbread:
Egg yolk - 1 pcs.
