Freeze Dried raw Sugar Snap Peas are pretty good. But in my opinion cooking them first is a game changer as far as texture goes. These crunch just like a chip. I do a comparison between the raw and cooked at the end so check it out.

Blanch for 3 minutes. Put in cold water. You can add a pinch of baking soda in the blanching water to keep the color. Best of both worlds. I do this with celery and beans as well. Don't overcook. I usually eat these a bit cooked as in stir fry once re hydrated. Or as is.

We've had good luck with seasoning the peas after we put them on the trays but, like you said, we learned the hard way to go REALLY light on the seasoning until we figured out exactly what they would taste like once freeze dried.

What seasonings have you enjoyed the most? About how much seasoning did you use? Trying these for the first time and want to get it right.

I wonder if just blanching them in lightly salted water would be good. If you follow the blanching with a ice bath they would retain the bright green color

What did you use for seasoning? I might try a batch with some Old Bay or some Chipotle. once again gonna have to buy all the peas and try all the things.

Thank you for testing both cooked and uncooked in the same batch for comparison. 🙏🏼 You mentioned baked SNPs by mistake. Do you think you could ROAST some to get a bit of char on them and then freeze dry those? Seems like that might be really great. As for the raw ones being slightly bitter vs the cooked. I would bet that bitterness is from the pesticides used on non-organic produce. The cooked ones, perhaps, had it washed off a bit since they were boiled for 15 minutes. Maybe? Thanks, John. I pretty much prep one day and freeze overnight then load and run the next day

I don't know, how long did you run them? The peas in my sugar snaps were very small

@@JohnInBibs normal automatic run with 4 hours extra dry time. I just snapped them in half and am re running now
