Omg,thank you MeMe! This recipe was absolutely delicious, my family loved it. I did make a few changes or additions. I pressure cooked my chicken with salt, whole onion and bay leaf, then when I mixed it, I added some garlic powder and pepper and I used fresh grated Parmigiano Reggiano cheese. I put the ritz topping but reduced the amount of butter. We served it over rice, it was so great! Thank you, thank you! 💐

A quick way to shred boiled chicken is to put it in your stand mixer bowl and turn the paddle attachment on a minute or two! Your recipe is so close to mine. I use Monterey Jack cheese in mine instead of Parmesan. I also add some poppy seeds to the crumbs. I serve it with rice, that I cook in chicken stock. Hello from Aiken, SC!!
