I’ve made this cake before. I got the recipe from country women magazine back in the 90s. But it didn’t call for coconut. It was called caramel apple cake. Made in a bunt cake pan and everything. Said optional sprinkle with nuts. I didn’t. The caramel on top was enough. And you are right. The cake gets better even a couple days old. Crazy good. ❤

Meme, I received your cookbook last week and my husband is so happy with everything I have made! He even asked what other things were in the cookbook...lets make them all.The apple cake was a HUGE hit. Bacon wrapped pork loin is in the oven now and smells heavenly!! Your story about "boil" reminded me of a similar story about my mom and her good friend Claire, who was from England. One day they're antique shopping and Claire was saying "brass" ("bross"), but Mom kept asking her to repeat it because she wasn't getting it. Finally Clare said, "The BRAAAAAASS!" sounding more like a New Yorker, LOL.

My daughter and I made this cake tonight and it was delicious. I did make one change and toasted the coconut because I don't like it raw. I will be making this cake again. It was easy to make. Thank you for this great recipe. Shine for Jesus!

You cook so much like my mom did…not big on exact measurements but just “eye” it. When I first got married years ago and lived out of state, I’d call about one of her recipes that I wanted to make, it would make me crazy with her measurements of…a cup or there about, a fourth of a cup or there about. She was a wonderful country cook but trying to duplicate her homemade Tennessee recipes was a lesson in trial and error. I’m 61 and mom passed last year at 95. Our family still love to make her recipes or at least as close as we can get to them. I love your sweet Christian spirit that shines through. 💕

Something happened, so let's try to finish this. Would love to have been there to smell and sample. You are truly a delight to watch and listen to. Love to hear you talk. I know it had to taste out of this world with the caramel sauce. My Dad use to make an apple cake was delicious too. So so many ingredients and it got expensive. So he made them for special occasions and people would ask for them. So he would make them up for Christmas Gifts. And boy were they all grateful to get those cakes and eat them up. You are a blessing to me to watch. Thank you for sharing your recipes and your home & time. The Caramel Sauce looked out of this world. Yum Yum !!. Have you ever heard of an apple cake recipe that uses oatmeal, apples, and a boiled coconut/pecan icing. My ex-mother-in-law used to make to make it but she would not give me the recipe. She said it was an old family recipe and she would not share it with me. Maybe she knew I was not going to be in the family forever. She was from Indiana so I don't know if it was a regional thing or what. But if you or anyone else has such a recipe I would love to get it. Thank you in advance. Deborah, I’m sorry your mother in law was/is such a fractured personality. Mine was too. All I could do was stay the heck away from her. Suited me because she was a chain smoker and deliberately blew her smoke in other (mine especially) peoples faces. RIP Thelma.

This looks good. I must try it. MeMe, if your recipe paper is not laminated may I suggest you do so. You don't want to lose a good one one like this. I know I had one in our Mom's handwriting laminated after she passed. I just didn't want to lose it. Love your channel.

Oh this looks so good! Will try it when it gets to be "fall" here in Florida... which won't be till late November, ha. I don't have a mixer, would the world come to an end if you mixed by hand? I'm originally a Connecticut Yankee. We moved to Phoenix when I was 10 and my Mom came home from work one day with a story. A coworker kept asking her for a pin and Mom kept saying she didn't have one. Finally the woman said "a pin to write with!" and Mom said "oh, you want a pen!" My husbands mother used to make this and she would add red hots. The little cinnamon candies that used to be popular. I don't even know if you can find them anymore. It would add little shots of red throughout the cake. It was sooooo good.

I’m making this cake again today!! It calls for 2 1/2 cups, I only have 2 cups self rising flour in my bag, can I use regular flour for the half cup ?

Yes, you can add 1/2 cup of all purpose flour. Also add about a 1/4 teaspoon of baking powder.

Well, Meme, I made the Apple Cake and I'm so disappointed. My cake stuck to the pan. I sprayed liberally with Pam as your recipe specified and it still stuck. My heart sank. Did you spray your pan with Baker's Joy or with Pam? I will definitely try again but this one will taste good, it just won't be pretty.

I used the baking spray. It has flour in it. I had no problems with my cake releasing. This cake is so good, I'm sure you loved it no matter how it looked. My Mom says, "it's all going in the same place." It always made me feel so much better when something didn't turn out as pretty as I had envisioned it.
