This week, Molly makes a perfect pairing for New Year's. First, her Mashed Potato Arancini from her new book More is More. These little cuties are kinda like those rego Arancini, except that instead of being made with leftover risotto, they’re made with mashed potatoes-a potato croquette of sorts! These are lighter and fluffier than traditional arancini and stuffed with olives and mozzarella, which makes them the quintessential drinking snack. In our opinion, they’re best paired with a Martini Thrice, also found in More Is More.
INGREDIENTS:
Arancini:
PRODUCE
4 medium Yukon Gold potatoes (about 11⁄4 pounds)
1 lemon
DAIRY
1 ounce grated Parmigiano Reggiano (1⁄4 cup)
3 ounces mozzarella or fontina cheese
PROTEIN
2 large eggs
PANTRY
Kosher salt and freshly ground black pepper
2 tablespoons extra-virgin olive oil  28 small pitted green olives
Canola oil, for frying
1 cup all-purpose flour
1 1⁄2 cups panko bread crumbs
Martini:
2 1⁄2 ounces gin
1⁄2 ounce dry vermouth
Splash of olive brine
Splash of pickled onion or cornichon brine
Green olives, choice of pickle, and lemon twist, for garnish

so cool to see you using a basque vermouth!! i'm from the basque country and i've never tried that one... i guess it really is good if you use it all the way over there! (fun fact: "tximista" means lightning in basque)

Where did you find that Tximista Vermouth?!? It’s so good! I’ve had it at a few bars and it’s the best vermouth I’ve ever tasted. I need to find some for my home bar!

I just spent 2 weeks in Sicily (home of arancini) and am now in Rome. The best arancini are the smaller ones; the bigger ones don’t fry up as well. And if it matters to you, ‘arancini’ is plural. One arancino, two arancini. Thanks Molly!

Native Italian here; can confirm that these are just croquettes. The shape of croquettes is usually cylindrical, but that’s the only real difference. Also, if you care to say it correctly (it’s whatevs if ya don’t) it’s one arancinO, multiple arancinI. Same goes for paninO/paninI. K, off to make some olive croquettes and a martini now!

This recipe describes me as a human. Italians cool your jets, everyone knows a classic Arancino is made with riso....she didn't claim it to be by the book.. and to add to that, I live half the year in Italy and have seen 'Arancini' made with potato on many menues especially in the area above Rome. Also @Molly Baz, Nice little heirloom Mauviel pot guest appearance ;) Keepin it classic and oldschool! Ps. not that it needs to be better but picture blue cheese stuffed ollives....

I'm going to make them now! They look a lot easier to form than trying to form balls with rice. I've tried Sicilian recipes but they've never turned out as I imagined they would. I wouldn't wish to intrude but is the cook with child? She looks positively radiant.

Typically a croquette has mix-ins as opposed to being stuffed. The stuffing technique here is definitely inspired by traditional arancini. I'd probably call this a stuffed croquette rather than a potato arancini but it's definitely a mix of the two

this sounds/looks so good! for everyone calling it a croquette, i think the important distinction here is that there's cheese stuffed inside (that's not classic of a croquette, but very classic of arancini)

Sorry - but this is kinda dumb: It is not an arancini. It is a stuffed potato croquette - probably you could call it a korokke (Japanese croquette). I mean, Molly would have finely diced potato and treated it as rice, I wouldn’t say something. But mashing potatoes = potato croquettes and not arancini! And why should it fit with Martini’s. Most vodkas (inclusive Titos) are not made of potatoes but of grain.
