Hit The Kitch with Molly Baz as she makes the softest fluffiest, most ethereal MASHED POTATOES of all time!
In this ep, Molly makes a little something she calls Sour Cream and Onion Cloud Potatoes. They are light as a feather, melt in your mouth and taste like….well, sour cream and onion! But that’s not all! Molly will also teach you a step you can take to prep these potatoes well in advance, and pop them in the oven to reheat, by using one secret ingredient. made these today for thanksgiving and let me just say, you will definitely NOT need more salt after adding in the milk mixture to the potatoes. the milk mixture already has 2 tablespoons of salt plus the massive amount of salt placed into the water when cooking the potatoes. they were perfect with just that amount (: no extra needed after that. i’m picky with the saltiness of my potatoes too. i normally think they don’t have enough but if you follow the recipe, it’s plenty.

Potatoes are never matching sizes, you normally cut them before you cook to be roughly similar size. Even then, for mash, I think it is ok to very slightly overcook a tiny bit of the smaller pieces. And yes, they need a lot of salt. Leaving the skin in the mash is a good idea, not only do you barely notice it in the end, it also contains a lot of the vitamins of the potato. Awesome recipe, I'm going to make it.

Just made these with what i had. Subbed shallot for garlic and onions for leeks (lightly sautéed) and parsley. Totally awesome. Will def make again. Thanks Molly. Cloud pots for life.

Being brought up in an Irish family we learned to make potatoes in all sorts of forms! My daughter once asked me if there was anything I didn’t serve potatoes with! I said cheerios! Lol!

Molly joining team skins-on for mashed potatoes! I think the skin provides great flavor, texture, and fiber and always keep it on when using either gold or red potatoes. Yum

Another way to lighten mashed potatoes is to mash 2 parts potatoes to 1 part turnips. Add a little butter or turkey fat and just a touch of cream.

I wonder if the potato mash could be made ahead and spread on the baking dish, and then on the day of just make the whipped cream mixture, add it and bake. I've heard that mashed potatoes can be made ahead and rewarmed but I've never tried it.

Love the Nakiri. I'm attached to mine, but it was almost $1000 so I can't recommend it to everyone. Japanese knives can get really expensive but there are cheap ones.

Mashed potatoes with BUTTER NO GRAVY YUCK is my favorite thing about Thanksgiving. Just gimme a bowl of really buttery mashed taters and I will go off in a corner and consume them like a Potato Gollum. I.... would probably die for these particular potatoes.

The recipe in the description calls for 5 lbs. of potatoes and 2.5 c. of milk but in the video Molly states 4 lbs. and 4 c. 🤔

Wayyyy too many chives and scallions for those mashed potatoes. IMO. But, to each his own. I would leave out the chives and potato skins, take the chives down to a 3rd or a 4th of the quantity, and the rest looks golden. Good job Molly.

I have a lot of respect for Molly's recipes, not just in general, basically all except for this one. I think the curse of the professional chef mashed potatoes has struck again. You mash with butter and salt, then add the other things for flavor profile. That way the butter "bursts" from the initial incorporation, and everything is properly seasoned (b. pep. in whichever part you want, doesn't make a huge difference). Let's be honest, that was a bit "gluey". No shade on my bro there, and his input on the process. I think that mashed potatoes has like a down homey "it's super easy, just do what you want" reputation, when really it's down homey like "anyone can do it right, but this is actually the thing that's right" reputation, which is also easy and perhaps more informative. Unless you go totally non-homey with the overworked soup texture sieve stuff, which you steered clear of (thank you) (unlike the old BA thing, which I hated). -Guy who writes long comments on mashed potatoes videos from content creators who were popular an internet generation ago, but I'll never leave because there's as reason you were popular.
