Ginger wine is yet another Christmas time favorite in our household. Mom usually starts working on it in early November so that the wine is ready for Christmas. She has been following this simple recipe for years and the wine tastes even better than most sweet wines sold commercially.

Hey everyone - I have just made the wine (double quantity) and it is fabulous - thank you so much for such an amazingly simple recipe. My learnings based on some of the comments I read: 1) yes, 15 lemons are required and no, it is now y too sour. 2) I struggled a bit with the quantity of the dry spices, based in the qty within the video, so used my discretion there. Overall, a really beautiful tasting wine at this stage - 5 star!!! Will provide feedback after the fermentation process in just after 3 weeks. Thanks again. Stay blessed.

Hi Bren - many thanks and please accept my apologies for not following through..... The wine came out just great, strong and with a great deal of depth, moreover, even today, it is still wine (has not turned to vinegar yet). Thanks again. Stay blessed and safe. ❤️❤️❤️

It will only turn into vinegar if you're fermenting open/ with a piece of cloth for the covering, once you're using an airlock it's wine🍷

Hi I've now put the ginger wine on bottles and tried to carefully open one and it's still fermenting and filled with gas. I'm in a hot climate and let the wine be for 3 weeks in the jar before I strained it on put it on bottles. Did I do something wrong???

Hi Jeanette, Apologies for the late reply. Thank you for trying out our recipe. We would suggest you to bottle the wine after the 3 weeks and put it in the fridge. This will slow down the fermentation process and will last a bit longer.

You're welcome Teresa. We usually finish our wine within a year. If you keep it refrigerated, it will last longer.

So instead of the taste of the ginger is the burning of pepper 🌶 😩. I know that trick while I was a child a lady in my community used to make ginger beer and sell and people used to say that she added pepper seeds to get harshness

You do not need to add yeast. The fermentation happens on its own :)

Could you please help me to make my first batch? I have some doubts. As you mentioned that air tight container, should I use airlock or just close the lid tightly? I have purchased glass jar with plastic lid (the jar used to make pickles). Should I fit airlock on the jar top or just close tightly the lid? Because carbon dioxide gas will be produced during fermentation. So just want to know should I use airlock system or just close the lid tightly. Also do I need to stir the must daily? Another question is that which kind of sugar is more desirable? Sulfur free sugar or just a normal sugar will be ok?

Hi Rupam, Thank you for reaching out. Yes, you can use a normal pickle jar with a plastic lid. Please ensure not to use air-lock lids and not to close the normal plastic lid too tight as the gases that form during the fermentation process may cause the jar to burst. Just close the normal plastic lid as you would close for a pickle jar- not too tight. For Ginger wine, you do not need to stir the mix daily. You need to let the wine rest during fermentation and can use it thereon. We use normal store bought sugar for our wine.

Hi Berna I did this ginger wine The taste is really good I liked it Just 1 query Y the fungas is coming What can be done to prevent by not coming of fungas If kept in fridge fungas never comes But since I dnt want to keep in fridge Any option Let me know what can be done But ginger wine taste👍👌

Hi Enid, I am so glad you tried out and liked this recipe. Regarding the stopping of the fungus, I have researched a bit and have found out that you could use potassium sorbate to prevent it. I however have not tried this out yet, so not sure how it works.

Hello Bret...How does the wine taste? Is it sweet or has a strong sour taste as 15 limes are used.Usually in other recipes, they use 2-4 limes.

Hi Iris, Thanks for your query. The extra limes do give it a sour touch. You can try with 4-5 limes at first. If you feel it needs more, you can add it at a later stage as well.

Hey how long can i let this wine sit before consuming, is there a scare of it turning into vinegar ? Same question for Grape wine as well !!

Hi Madhu, Thanks for your comment. We usually consume the wine within 5-6 months of preparation as it does turn into vinegar if kept for longer. Our home made grape wine however lasts for more than a year.

Hi Shreen, Apologies for the late reply. The wine made using this recipe is not meant to be kept for a long duration. The longer you keep it the fermentation continues which changes the taste of the wine. We would suggest you to keep the wine in the fridge after making it. This slows down the fermentation.

Yes Matilda, a plastic jar can also be used but a glass jar would be preferable.

Don't use yeast in this combination. Add 100 gm raisin. Its a healthy and tasty recepie 😋😋😋

You can do that or just leaving the cap of the bottle a bit loose would also do.

to get proper fermentation add Yeast in little warm water and then add it to this liquid.

Hi Ashish, this recipe does not require the addition of yeast or any other fermenting agent. The fermentation happens on its own in a week or two. You can try this out.

Hi Chia, Thank you for your query. Yes, you can adjust the ingredients as per the given measurements. So yes, you would need to double the ingredients if you are doubling the water.

Thank you for the effort. You also need to mention that it will turn to vinegar if not consumed within 6 months and also that it forms fungus. Probably citric acid will prevent fugus

Madam, Thank you for the ginger wine recipe. Reading the comments after preparing the wine got me a bit disturbed. This is an amazing recipe. There was no fungus neither did the wine turn to vinegar. After 21 days I got a fabulous tasting wine. Just follow the instructions in every detail. I did a second batch now. Please subscribe to this chamn so madam could share more such recipes. 🙏

After keeping if for 5 days there is all fungus on top of the wine. what has to be done next? Do we have to filter it? Do we drink the fungus also?

We usually remove it with a ladle. You can filter it as well.

Yes, it did. When the weather got a little warm the wine started fermenting.
