Two Words. Mushroom. Beer.
I added 1.4kg (3lbs) Portobello Mushrooms to a standard Brown Ale to see how this would taste!
This is the D&D Samman Beer, or my own rendition of it.
Dwarvish, Underdark Ale felt very appropriate to brew up with some funky mushrooms!

Recipe for 14L (3 Gallons) - 60 Minute Boil ~ 5.3% ABV:
* 3kg Pilsen Malt (76%)
* 600g Caramunich III (15.2%)
* 350g Special B (8.9%)
* 20g Cascade (17.4 IBU) @ 60
* Teaspoon of Yeast Nutrient @ 15
* 20g Willamette (8.6 IBU) @ 15
* Half a Protafloc @ 5
* 100g Portobello Mushroom @ Flameout
* Nottingham Yeast
* Mash @ 65C (148F) for 60 minutes
* Boil for 60 minutes.
* Ferment @ 20C for 7 days
* 1.3kg Portobello Mushroom Dry Hop
OG: 1.053
FG: 1.013
ABV: 5.3%
IBU: 26

Yeah agreed, hearing people talking about Shiitake having different qualities to Maple Syrup Candy Cap mushrooms etc. is really interesting!

Oh man, I feel ya on this one. I make some of my favourite beers, the wife doesn't like it. I make some beers that I wish I didn't, she likes them. We can never win!

That's exactly it! I was just glad it meant that I didn't have to dump the entire batch! I'm lucky that we both love a nice lager so always a joy to brew those, they go way too quick sadly!

lots of mushrooms species make truffles, they are called sclerotia.

Love this! I've always been curious about making a mushroom beer since I read Denny Conn's Wee Shroomy recipe. I think he used chanterelle, but would be fun to experiment with different types of shrooms to get different flavor profiles.

Thanks! Oh damn I didn’t realise he’s got a recipe I might need to give it a read in that case! Wee Heavy with Chanterelles could be lovely, I’m thinking a Saison or Belgian May have been a better choice potentially for the Portobello

I made an English Bitter which tasted like mushroom soup. I guess I had either some bakteria in there or the yeast (Nottingham) was just too old. I'm still keeping a few bottles to check how it changes with time.

Interesting! Maybe part bacteria? Although if no slime or pellicle could just be funky yeast!

The moment I saw the portabella and I had second thoughts. If I would even dare to try this, I'd probably use, in moderate amounts, either maitake or shiitake mushrooms. They are more umami and less earthy. Great video, though, cheers!

See it’s really interesting because I was worried shiitake would be too strong! I think portobello worked well but it just needed a more conflicting backbone like the Pepper of a Saison maybe

That sounds really neat, I might tweak it and try one! I'm curious why you're using Pils as your base malt for something that'll end up dark. Aren't you then going against the base profile of your base malt? Why not start with 2row, or Munich? but also your conversion to American volume is out. 14L seems about right for that grist to end up around 5% though

If you do so definitely let me know how it turns out I’d love to know! I like Pils as base malts over 2row, not sure why I just prefer the slightly more neutral malt profile compared to 2-row I’m using UK Gallons :)
