Mutton Rogan Josh is one of the signature dish of Kashmiri cuisine. Essentially a lamb stew of Persian origins, it is laden with aromatic spices that give not only contribute to its unique taste but also that characteristically bold red color.
Ingredients;
750 grams mutton with bones cut into pieces
2 medium sized onions cut into slices (180 grams)
1/2 cup ghee
1 cup plain yogurt
2 teaspoon ginger and garlic paste
1 ½ teaspoon salt
2 ½ tablespoon Kashmiri red chili powder
1 ½ teaspoon ground coriander
1 teaspoon ground turmeric
2 teaspoon ground cumin
1 ½ teaspoon ground fennel seeds
1/4 teaspoon asafetida (hing)
1 ground black cardamom
5 ground green cardamoms
1 teaspoon ground dried ginger (sonth)
5 to 6 whole cloves (laung)
15 to 16 black peppercorns (kali mirch)
1 teaspoon cumin seeds
1 star anise (badian ka phool)
4 to 5 small pieces cinnamon
2 pieces mace (Javitri)
1/4 teaspoon ground nutmeg (jaayaphal)
2 pinch of zafran
