INGREDIENTS
Beef preparation:
* 4 pounds of stew beef
* 40 g ginger
* 4 scallions
* Large onion
* 8 cloves garlic
* Hand full basil
* 8 Thai chilis (substitute with 2 habanero or scotch bonnets)
* 1/2 Tbsp rosemary
* 1 teaspoon aniseed (substitute with the same amount fennel seeds)
* 1 tsp black Pepper
* Salt to taste
* 1 Tbsp beef base ( substitute with 2 seasoning cubes of choice)
* 1/4 cup water to blend marinade
Stew preparation:
* 10 cups blended tomatoes without seeds
* 2 large onions and 2 medium size onions
* 6 cloves garlic
* 1/2 cup dry smoked shrimp (substitute with 1 shrimp bouillon)
* 1/2 cup pettie bell chilis ( substitute with 4 scotch bonnets or habaneros) you may decrease the amount to your heat tolerance
* 4 cups of avocado oil ( substitute with any oil of choice
* 1 teaspoon crushed black pepper
* Salt to taste
* 1 Tbsp drewry rosemary
* All broth from cooking beef

I’m Eritrean who grew up in America myself and I agree. Every single Ghanaian I met, I am *not* exaggerating, EVERY single Ghanaian I met, which is many, has been just filled with so much decency, forward-thinkingness, and friendliness. All my life this has been the case. Can’t wait to visit sometime in the future (and try stews like this too 😋).

My dear gramma past away 2 months ago. She was 103 years old... And it’s like I didn’t had enough time with her. I miss her and watching your video reminds me of my own childhood with her. I learned how to cook Haitian food the right way with her and for this I’ll be eternally grateful gramma. Thank you 🙏🏻 I miss you so much Man😢

Omg I'm crying. I miss my grandmother too (God rest her soul). She taught me how to cook. She use to sit me in my chair as a baby when she cooked and when I got older to help... it was on from there! Grandma’s are the absolute best. All those wonderful and memorable memories we have with them. So emotional hearing how your grandma impacted your life. What a beautiful relationship with your grandmother. 🤎 I also had a wonderful grandmother growing up in Liberia, but I only had her until I was 9 yrs old. We called her Big Ma and we loved her so and she loved her grandkids. I miss her everyday. Thank you so much for sharing. I especially love that everything left over from the recipe had a purpose like the tomato juice for soup and seeds to regrow in the garden and even the oil reserved for making jollof rice. I so enjoyed listening to you embracing your grandmother and through generations great woman are being created. Loved that about you. I never met my grandmothers on both sides they passed before I was born. My mom til this day uses all fresh ingredients no process foods and cooks every meal from scratch. Brought tears to my eyes because I also was raised by my grandma because my mom was in the states. She taught me everything I know. And like your grandma, she was a prayer warrior. I'm literally in tears right now. she passed away 12 years ago and I think about her every day😪😢.

I love the way she used a lot of onions and this is really the secret to delicious stews. I've learned so much in this short video, so many little nuggets i will definitely be keeping. Feelings of longing to go back to the homeland to see Nmaa (Grandma)??? Their relationships with grandchildren are even stronger than the parents. Surely you need to go and see her soon once the health crisis is over. Nmaa (Grandma) please hang in there till Nanaaba comes home once more!!!! Got to give this recipe a very good shot soon. My my my gosh she looks rather strong for her age seeing her with her great granddaughters. Priceless memories!!!!!
