Italian Stuffed Peppers
Ingredients:
2 lbs ground meat
1.5 tbsp Italian sausage seasoning
8 oz mozzarella cheese
4 large bell peppers
Pasta sauce
Homemade Mayonnaise
Ingredients:
1 large egg (3 quail eggs)

1 tbsp dijon mustard
1 tbsp white wine vinegar
Kate'sHomemade Caesar Dressing
Ingredients:
1 cup mayonnaise
1 tsp anchovy paste
2 cloves garlic

Morning ,Sarah! The next time you make dressing, if you dip your spoon in the oil and tap off the excess, then put in the mustard, it will slide right out. Then clean the oil out with the measured vinegar. 😁😁

Amazing that so many don't know to do that, I learned that when I was 10 yrs old mom showed us. Can also dip in oil when cooking way more things.

If you have an immersion blender, it is a game changer for making mayo. Just put all ingredients in a jar and blend. No need to slowly add the oil. You just keep the blender still until most of the ingredients have emulsified. Then you start moving the blender to incorporate all the oil. Mayo in less than a minute. Love watching the kitchen videos.

The last time I had stuffed peppers I swore I’d never have it again. I took a chance on this recipe and it did NOT disappoint. I don’t have the seasoning described in this video so instead I used Italian seasoning, sage, garlic powder, onion powder, salt and pepper; I added an egg and I added bacon grease because our beef was very lean. I loved it so much! It’s going in the rotation! 😋 PS to add: You’re absolutely glowing in your new kitchen.

What changed my attitude was cooking the filling and then cooking until crisp tender. The overcooked pepper turned me off.

If you mayo “flops” start over with new ingredients and then once you get it to the stage where is is getting creamy you can begin to slowly add the “,flop” and remaking oil. No waste double batch!

I love your enthusiasm at making cooking videos in your beautiful new kitchen. Everything looks delicious! I actually didn't think the price of your peppers was too bad. In our area, the cost of red or yellow peppers are at least twice as much as what you paid. 😵‍💫 I love the apron that your Aunt made for you. It's beautiful. Sarah, your kitchen is lovely. Thanks for the recipes and for the cheerful start to my day. By the way, I love the way your hair is greying. I think this stage of streak and change is beautiful. It is good to see another woman not afraid to let her natural beauty show. I am almost 75, and mine is only a little more grey than yours. Since I waited so long to get it, I will surely not hide it. Your apron is beautiful, too. This video is one of the best - a classic! I enjoy all the aspects of homesteading that you and you dear husband show us. We are no longer farming, so watching (and learning) your videos are especially sweet and enjoyable for me. It is like going home for a while. If you drill a small hole in the bottom of the food plunger of your food processor you can fill it up like a cup that slowly drizzles the oil in. Makes emulsifying very easy!

Several comments: I wore contacts for ages, it takes practice. I love the mayo recipe, it's much better than the one I've used & I think I'll start making it as a standard Most stuffed peppers I've had,also included rice in the mix, maybe because we always had a BIG family. Now it's me & dad. I'll not use Italian season, as I'm allergic to anise & fennel, but I'll do the rest. In the past, I would make the stuffed pepper - cook - unstuff them, save the pepper & restuff, lol, talk about stretching. The meat stuffing was yummy, BTW only 2 uses of pepper worked. When u come from 8 kids & have a zillion yourself u do odd things Last comment. Love the way u filmed with angles, showed off the food & kitchen to advantage

The gentleman I bought my original quail eggs from said that quail have a slightly higher body temperature than chickens. He said salmonella couldn't grow at that slightly higher temperature so quail eggs were safe to eat raw. He ate 4 a day. He only raised chickens to give eggs to his neighbors so they were on board with his backyard aquaponic and poultry projects.
