Blackeyed Peas and Cabbage are my family's New Years Day tradition. Here is how I cook Blackeyed Peas for my family. Recipe below:

Ingredients:
* 2 pounds of Blackeyed Peas (Dry, Soaked 8 hours)
* 1 pound of center cut bacon (cut into pieces)
* 1 large onion chopped
* 1/2 cup bellpepper chopped
* 1 cup chicken stock
* Water (see directions)
* 2 Tbps Nunu's Seasoning (Cajun seasoning)
Directions:
1. Soak the beans overnight (around 8 hours)
2. Heat a larger heavy pot to medium high and add bacon
3. When bacon is browned, add the chopped onions and bellpepper (Stir until softened)
4. Add beans and chicken stock. Add enough water to cover the beans by 1 inch.
5. Heat to a boil, then lower the heat to medium low and simmer (covered)
6. Stir periodically and let cook for approximately 2 hours. *
7. Once the beans are soft, mash some of the beans and stir to thicken.
*note - keep an eye on the water level, the beans will stick and burn quickly if the water level is too low
