One of my favorite COMFORT FOOD recipes. My kids love this simple and delicious dish.

NOW FOR THE FOOD:
Ingredients:
2.5 - 4 lbs. Chuck roast or any beef cut (Short Ribs with bones is my preferred - the bones make the broth taste SO good)
2 onions (roughly chopped)
1 tablespoon - Whole Peppercorns
1 teaspoon - Fresh Ground Pepper
1 tablespoon - Kosher Salt
1/3 cup - Patis (fish sauce)
1/4 cup - Soy Sauce
10-12 cups of water (depends on size of the pot)
3-5 medium sized red potatoes (quartered)
1 head cabbage (chopped)
*2 large carrots chopped into 2 inch pieces (optional)
*2 corn on the cob cut into small pieces (optional)
Directions:
1. Cut meat into desired serving size pieces
2. Combine meat, peppercorns, onions, and water in a pot (fill the pot to where the meat is submerged an inch or more below the water)
3. Over high heat, bring contents to a boil; skim off the impurities
4. Add fish sauce, soy sauce, and salt and ground pepper
5. Reduce heat to medium low, cover, and set timer for 2 hours (a minimum of 1 hour 45 minutes)
6. With 20 minutes remaining on the timer, add carrots
7. With 15 minutes remaining, add potatoes
8. With 5 minutes remaining, add corn and cabbage
9. Check for taste and add more fish sauce, soy sauce, salt (or water if too salty)
10. Stir contents and remove from heat
11. Serve with rice
