NO CORN, IT'S BACK! 12 Things YOU Should Know About Huitlacoche | Edible Fungus & GROWING Mexican Mushroom | Guten Yardening
For the second year in a row, we are fortunate to have huitlacoche (corn smut) growing in our garden. While most people probably see the corn galls and think that they look like alien creatures, this fungus (sometimes called cuitlachoche) is considered a delicacy by some and is not only an edible fungus, but is a highly delicious one.
In this video, we talk about 12 of the most important things we have learned about huitlacoche, including how the corn smuts fungi taste, and we try to ease your minds about eating it, if you have never done so before.
Don't throw away your corn if it looks like this. You could be missing out on a great treat!

I remember my mom calling it smut and looking at it disgustedly, as she cut it off and threw it in the garbage! Who knew?? Very interesting!

That is the initial reaction we had last year, but after learning about it and trying it, that won't be our reaction in the future. :)

great video! love the info! if you have an abundance you can charcoal it and add it to meals for alkalizing. there was a study done that huitlacoche may even assist autoimmune diseases as a subunit oral vaccine!

Just think of it like a mushroom. :) It is really tasty, and easy to prepare. I like the smaller pieces the best raw. :)

Would you happen to know how someone can pressure can it? I know you can do mushrooms but this I have never tried. It would be cheaper in the long run than going to the store and buying it. It is very expensive in some areas here in the states.

Never have I had my corn do that. Not sure that I could get past the appearance if it did though.😳 I would be interested in what vegetables you are starting for your winter inside grow. Will you be sharing that info ?🤗

Ate this in Guanajuato Mexico. Right now I have a melting down mess of corn shutting. How do I use what I have to get more corn to respond next year.

As a LOVER of sweet corn, smut showing up has always been the worst thing that could happen. Wow. Who knew? But I still don't want it--LOL!

We love sweet corn so much, too. But, when that goes wrong and this is the result, we can't be completely disappointed. Taste it once, and it could make all the difference in how you think about it. :D :D

Great question! I don't actually know what that limit would be. But, we don't eat the ones that are old or decayed looking.

As the huitlacoche matures, like any mushroom, it spores out, to reproduce. At that point, as you said, it is not edible, but I wonder if You could save it to inoculate next year's crop.

My corn has been a bust for two years running. This year I tried a variety designed for container growing and still 👎🏾.

I am thinking that one thing we will do next year is go heavier on the nitrogen and see what difference that makes. We have not had a lot of corn production the last two years either. At least there is always next year. :D

try to grow with beans. it takes all the nitrogen from the soil and pole beans with supply soil with nitrogen. look up 4 sisters growing.
