I'm Mexican. I love saying that I am Mexican. I'm 53 and that is what I grew up saying. Today, it seems the "proper" word is Latina. I didn't hear that work til I was almost 30. I prefer MEXICAN and love that you used that term to describe yourself. You rock!! 😇

My mother is diabetic and I LOVE ❤ that I can make these without her feeling robbed of the good flavors! I made her your Potato-less Cauliflower salad & she loved it...for Mother's Day I'm making her one of your cheesecakes topped with choczero white chocolate spread (it turns really good frozen with the chocolate as a hard top)...she always tells me her blood sugar is lower the day after. Looks great!!! We still make your Taco Soup recipe EVERY WEEK! We personalized a bit adding steamed blended cauliflower to the bell peppers and onion to add creaminess and cut a bit on the cheese. It's our weekly staple!

I do a similar thing but with poblano peppers. I make something similar to chile rellenos, but more of a casserole.

I advise people to make their spice combo instead of using taco seasoning packets. They put sugar in those and it adds lots of carbs.

Keto LowCarb is so easy towards making Mexican food. Love all the recipes you share. It’s been tuff getting back on track from GBP surgery at 318 to 220 after coming across Keto LowCarb lifestyle and getting down to 160 and now with 2020 behind us 🤪😖🥴stressful 3 years. Emotional eating came back 😡need to focus on getting back towards clean eating. Thanks for helping with the process. It’s mind over matter and there are so many delicious alternatives. Hey Mayra! That looks great! My Mom is Greek, she used to make stuffed cabbage rolls with ground beef, rice, tomato sauce and lotsa lemon 🍋 Yum! This is a cross between cabbage rolls and enchiladas. Being a native, low carb SoCalifornian, who obviously loves Mexican food, that works for me! I can’t wait to try it. I may try it with jicama wraps. I’ve only eaten jicama raw, I have never cooked it. I read it becomes crispier when you cook it, so that sounds interesting. I made the Eggroll skillet, it’s so yummy! ❤🥬🧖‍♀️💆‍♀️

A trick for cabbage it so core and put the whole head in the freezer and then thaw. This will make the leaves pliable when they are thawed. I do this for my cabbage rolls.

We discovered these fantastic sliced no-sugar turkey packages at Costco and have been using them as delicious enchilada tortillas for a while now.

@@annettediscos The offering we liked is no longer stocked there but it was a "Dietz and Watson" brand. There is another brand, "Empire" there now that is fine, but the slices are less stable. A bit more expensive (less volume per package) as it touts being Organic and Kosher. This is on the North East Coastal region.

Mexican style stuffed cabbage rolls! all it needs is rice. I make a deconstructed cabbage roll soup with southwest flavors. This recipe would work for that, just chop everything up and add stock
