3 cups cooked quinoa
1 red pepper
1 orange pepper
1 medium onion
1 medium zucchini
1 jalapeño, no seeds or veins for less heat
1 can black beans
1 can pinto beans
1 can of whole kernel sweet corn
1 large can of crushed tomatoes
1 1/2 tsp cumin
1 1/2 tsp coriander
1 1/2 tsp garlic granules
1 1/2 tsp onion granules
2 tsp salt
1/2 chili powder
1/2 black pepper
Sauté onions and garlic them season with 1 tsp salt and 1/2 black pepper. Add the rest of the veggies along with the rest of the seasonings and cook for 2-3 minutes. Next add the beans, corn, broth, crushed tomatoes and cook 30-40 minutes or until desired thickness is achieved.
