These Russian Walnut-Shaped cookies is very popular dessert. In Russian "oreshki" means walnuts. They are traditionally made in a spesial mold that is called "oreshnitsa" and filled with either cream or caramel. Today, I want to show you more luxuries version: Chocolate cookie dough "oreshki" filled with chocolate ganache and...as a surprise, we are going to put hazelnut in a center of each cookie. Also, to make them look like they were found in a magical forest: I am going to spay couple with edible Gold.
"Oreshki" recipe:
3 eggs
¾ cup(180g) melted butter
½ cup sugar
1½ cups(350g) flour
¼(50g) cocoa powder
1 tsp baking powder
½ tsp salt
Method:
In a mixing bowl add: eggs and sugar and whisk until pale yellow.
Add salt and melted butter, whisk.
Add baking powder.
Add cocoa powder and couple table spoons of flour, whisk.
Add remaining flour and using spatula mix until all flour has been incorporated and dough becomes even.
Cover and refrigerate for 30 min.
Preheat "oreshnitsa"(no greasing needed if you are using a non-stick coated one)
Make small balls out of the dough and cook walnut halves until they become crispy( 2 min or so).
Let walnut halves cool, then trim edges.
Make Chocolate Ganache filling.
Chocolate Ganache Recipe:
340g(12oz bag) Semi-Sweet chocolate marseles
170g(¾ cup) Heavy cream
Heat up heavy cream and pour over chocolate.
Mix until smooth and glossy.
Cover and refrigerate for 1 hour.
Put cookies together by filling up each half with chocolate ganache.
Place whole hazelnut/walnut/or almond in a center and paste them together.
To make them look more beautiful you can spray them with edible Gold, or simply dust them with icing sugar.
