This potato pie was a major hit at the OTK. Think potato dauphinoise meets quiche, wrapped up in pastry. It's as good as it sounds. It's as great a dish to serve on a chilly day as it is eaten (hands only) at a picnic. The salsa verde is a fresh and acidic companion to cut through this carby pie.

I made this for Easter and knew it was a success when one of the guests yelled across the room to let me know how much he was enjoying it! I then made it for a girls' weekend away the following week, and it again turned out beautifully! The salsa verde has become a staple as well!

Oh my word!! This recipe is absolutely phenomenal!! Made it last night and it was deeeeelish!! All parties at the dinner agreed! I'm also so excited for the many ways I can use the salsa verde - it seems so versatile!

The only change I’d make is cilantro leaves and stems instead of basil in the salsa verde. Two delicious recipes. The pie is definitely picnic fodder!

Love this video!! The pie will be a super picnic food , this coming summer in 🇦🇺 and the salsa verde will be the way I get to eat more sardines yay!!!

My local Whole Foods has tiny bottles of saffron which cost in excess of 400 USD per ounce. With such a precious ingredient, perhaps a pinch directly in the sauce rather than the pasta water would be a better use. A little less flavor in the pasta but more in the sauce covering it.

Thank you! Definitely making a variation on the sardine pasta tonight, but likely omitting the saffron - that I hoard 🙂 Appreciate the suggestions of how to play with all the other stuff I have on hand! I eat sardines straight from the can far too often...well, with Texas Pete [a mild vinegar based hot sauce] 🙂

I made this as a dinner for us tonight and wow….an amazing explosion of tastes 🥰. I read the recipe, as usual, diagonally and ended up by “massaging” my potato mixture all at once before dropping it onto my pie pan. Didn’t change the cooking time or taste, I hope 😃🤔. My husband’s on his third helping….. thank you once again for an amazing recipe. Can’t wait to get my book order. 🙏

Thanks Agnes, we haven't tried it without the top pastry but if you do, you'll probably want to cover it with foil to help the potatoes steam for the hour then uncover and put back in the oven to get some colour. Let us know how it works out!

@@Ottolenghi ok. I made it open-faced with some modifications: pre cooked the sliced potatoes in cream & some full fat milk. Then used the cream with 2 eggs which I poured over the potatoes (layer of herby cheese - potatoes- finished with the rest of the herby cheese). End result is freaking fantastic!

This recipe looks amazing! I know she mentioned being able to make it and leave it over night in the fridge before baking it, but will the pastry get soggy?

Keeping it overnight should be fine as the uncooked pastry, with its fat content, will keep a good barrier and having a thick custard also helps against sogginess. Enjoy!

I have a pan that's about 2" tall, will that still work for this pie??

Yes, that would work. We call for a 3cm tall tin (about 1.2 inch). It just means you might have a bit more pastry edges to cut but should definitely still work. Enjoy!

If I prepare and refrigerate the pie unbaked the day I plan to serve, should the pie come to room temperature before baking or may I place the pie straight from the fridge and into the preheated oven?

You can put in the oven straight from the fridge. No need to bring to room temp.

Seems a bit wasteful use of saffron to me. Most of its aroma ended up in the sink with the pasta water.

You could incorporate the saffron in the fry pan with the sardines instead and use less.

This looks amazing, but I would add the saffron to the sardine pan NOT to the pasta water. All the flavor will go down the drain!

She did advise against waxy, less starchy potatoes - I'm guessing something like a russet would be a good choice. That said, i love this channel, but there are many instances where a bit more information on an ingredient would be welcome.

@@sararichardson737 Sorry but that´s really not the point here - sure I can google what kind of potato "King Edward" is (I did and I am still not sure if it is waxy or sticky or all-purpose.) Obviously this cook tried to give a valid information on which potato to be used and sure I can always go by trial and error, but that´s not what a good cooking video is meant for...
