The idea behind this advise is to avoid curdling of curd. Like to make Kadhi, besan is mixed with curd, similarly this recipe has tamarind and other spices. Here curd is used as a marination to the vegetable. The water from vegetable will help avoiding the curd to be curdled

​@@tarunguptaphotographyis it Bhimsen Kapur available in our market safe to use for food?!! As I heard the most available varieties of even Bhimseni Kapur are not 💯% pure... chemicals are mixed in it. It's purity varies from 60% to 80% , in such scenario, won't it cause to food poisoning?! 🤔🤔

You have to buy only that bhimseni kapoor which is mentioned 100% pure and most importantly edible. We have given the link to buy original kapur in our video description also and giving below also. amzn.to/3Gl8Raf Also, any kapur can cause food poisoning, you have to use it just half a pinch precisely 1-2 gms

Ayurveda doesnt recommend baingan to be eaten in most cases. Was it truly used 5000 years ago? Can you also share what other vegetables were used?

You need to correct your statement "Ayurveda does not recommend Brinjal in CERTAIN cases". But isn't it true for all the vegetables. Curd is not recommended in cough, Spinach and Milk is not recommended in Monsoons, Urad Dal is not recommended in acidity. Ayurveda just prescribe the do's and dont's in everything. It is we who make a particular substance a culprit. Brinjal is not recommended only to those who have a tendency of High Pitta or Vata dosha as brinjal increases that. Those suffering from high Kapha dosha or those who have no problem with Pitta Dosha or Vata Dosha can consume brinjal in moderation which is extremely beneficial in some micro nutrients and produces heat in the body. Winters is the best time to consume Brinjal. Also the correct way to cook brinjal is with curd (like we have shown in the recipe) to balance out the heating properties of brinjal. Brinjal is one of the oldest consumed vegetables in the world. We have shown number of dishes in other episodes to showcase what was eaten in ancient india. Thanks for watching our video.
