Pan Roasted Tilapia with Garlic Butter Wine Sauce
Serves 4
4 tilapia fillets seasoned with salt and pepper to taste
1 tablespoon grapeseed oil
1 green onion white part only sliced
1 garlic clove minced fine
¼ cup Frie Brothers Chardonnay
1 teaspoon fresh lemon juice
4 tablespoons cold butter
½ teaspoon Italian herbs
Lemon zest (optional)
Heat a large skillet over medium high heat for one minute. Add the oil and seasoned tilapia and cook for 1 minute per side. Move the fillets to one side and add the onions and garlic to the pan. Sauté for 30 seconds and add the wine. Hold pan at an angle as the wine reduced by 75%. Add the lemon juice, butter, Italian herbs and whisk until melted.
Turn the fillets one more time and spoon the sauce over as they cook for one more minute. Serve immediately and top with the lemon zest (optional).
Enjoy with Frei Brothers Chardonnay, Barefoot Bubbly Brut, Blue Moon Belgian White or Ballast Point Sculpin.
