Cantonese from Hong Kong here. I treed pancit palabok in Manila a few years ago & I was blown away by its mild but deliciously savoury flavour. I couldn't figure out what the sauce was. Apparently it's mashed tofu coloured with annatto!!!! For me as a Chinese, it's the most bizarre Pinoy "fusion" noodle dish ever LOL. (I mean, we never put tofu & noodles together). Can't wait to try & cook it myself now. Salamat po.

Pancit bihon was a dish I grew eating (I ate loads when it entered the table lol) as I had a Filipino aunty I grew up with. Meron din pong Palabok sa Cavite, specifically Tanza. this one is usually eaten on banana leaf. It is sold per pack then yung itsura nya is pa-triangle na banana leaf and dyaryo. Wala tofu or pork, it is just pure sauce but yung toppings nya ay Pork and Garlic oil, Tinapa, Chicharon, Kropek and egg .

I love both dishes kasi mahilig ako sa noodles! I have mastery sa pagluluto ng pansit bihon and sotanghon, very similar to Mama Lulu’s so I want to try her style sa palabok.
