The Sicilian recipe pasta with broccoli arriminati is one of those dishes that I always order when I go to Sicily. I like it very much, both for the play of colors and for the textures, but above all for the scent and the flavor that this fantastic first course has.
Some friends who live there explained to me that the term "arriminato" means "mixed" and in fact this is a fundamental step in the recipe itself because with this gesture you get a creamy pasta at the right point.
You can use both white and green cabbage, but I chose the first version. To amplify the flavours, in addition to the cabbage, very savory ingredients are used such as anchovies which, however, contrast the sweetness of the onions and raisins.
In short, it is a real triumph of tastes and aromas with a Mediterranean flavor that is always a great pleasure to find on the table.
Pasta with broccoli arriminati is also a very cheap first course and is very simple to make.
The ingredient that can't be missing? The toasted breadcrumbs or breadcrumbs that give a touch of crunchiness that I always find appetizing for the palate.
It is a first course of peasant origin but rich, very rich in taste and I am sure you will like it!
