Dates and Carrot Cake: This is a healthy carrot and dates cake in which part of the maida (all-purpose flour) is replaced with whole wheat flour. This is not just a healthier version, but also a tastier one, for it has the right proportions of the star ingredients - carrots and dates, and also includes chopped nuts. You could use either cashew nuts or walnuts as these go well with dates and carrots. The smaller bright orange carrots are best suited for this delicious and moist dates and carrot cake.
This incredibly tasty and healthy carrot and dates cake would make an excellent Easter cake, and even a good choice of Christmas Cake. So do give it a shot. You'll love it, and so will your family.

Veena dear wanted to write last night about my experience with the cake. As I told you earlier I was lucky to use my weighing scale so the measurements went right. I had a problem making the caramel. I did exactly as you said and on low flame since am used to making the caramel for the christmas cake. I used a pan just like yours a thick stainless steel pan. The sugar melted and I was waiting for the color to change but instead all the water evaporated and became sugar again. I continued and at last the color changed. I waited for a while to get a dark color then I put 1/4 cup water and had to put it back on the fire to thicken it a bit. It was fine and instead of adding 2 tbs extra oil to the 1/2 cup I just went with 1/2 cup. The rest was the same. The cake is super delicious and moist as ever. Only the baking time in my oven took 1 hrs 15 mins but it is all ok and super delicious. Tku veena. You are a wonderful person. You were with me and answered all my Qs. Tku so much and God bless you

Yes, making the caramel is a little tricky as the sugar has to start changing colour while it is still in the melted stage. Anyway, so very glad that in the end, your cake turned out great. to avoid caramelization, you can add 1/4 tsp lemon juice to the sugar syrup. hope this helps.😀

@@pauljaya774. you're right. But even without the lemon juice, if you make the caramel correctly, there's no major problem with crystallization. Some people even add a little butter towards the end to make sure the sugar doesn't all crystallize again. If just a little sugar crystallizes along the walls of the vessel, there's no problem because when you add the water, this crystallized sugar from the sides dissolves into it.

Thank you very much for this recipe. I wanted a substitute for the Christmas cake as it is time-consuming. This tasted very much like a Christmas cake with a beautiful rich dark colour. I added 3 cardamoms and a teaspoon of cinnamon powder. It looks like we can add 1/2 cup of water to make the caramel as I found the 1/4 cup to fall short. Splendid recipe. I shall bake this in large batches for Christmas to distribute among neighbours and I would surely spread the word around about this wonderful recipe. Thanks again. God Bless!

Veena Madam Thanx a lot by sharing wonderful recipe! 🙏🙏 Just now I prepared the same with slight changes e.g.instead of all purpose flour I used small rawa, sugar was replaced by Kakwi ( jaggery syrup). Taste is really wonderful!👌👌😋😋 Once again I and my family are really grateful! 🙏😊 I changed some ingredients for health reasons.

Hi Mam cake seems delicious. I would definitely try. I am vegetarian hence can not use eggs. Without eggs can I prepare I ike u or I have to replace the same with any other ingredients.

Sure, @@salochanabahlani2703. Instead of eggs, whip up 3/4 cup of yogurt and then mix that into the batter. But depending on how thick or how watery your yogurt is, you might need to add a little less or a little more of water at the end while adjusting the consistency of the batter, if it's necessary to adjust it. Also, reduce the oil to 3/4 cup + 1 tbsp. Everything else will stay the same. Enjoy! And thanks for the appreciation.

For an eggless version, as a replacement for each egg, you have to add around a 1/4 cup (55-60g) of yogurt. Just see that the yogurt is not too sour. Also, adjust the consistency of the batter in the end. If it's too thin, add in some maida.

You make the sugar-syrup process look easy, I used black treacle and coconut oil, but now may attempt your method.

@@PataCake The spices and rich color worked wonderfuly, alas my syrup not so much. I always reduce sugar in cake recipes, also I used sultanas/raisins in place of dates.Mashed bananas instead of sugar at the start will be 3rd try!

I love any form of cake recipe though l am diabetic. I like this cake with dates & carrot. I will try this recipe with some modifications like only wheat flour. Use coconut sugar with low glycemic index for people like me. Instead of caramel just use insstant coffee powder.

Veena do you tightly pack the cups. Looks like you have added 1/4 cup water to the caramel twice. Please confirm. The umpteen Qs are because am in the making.

In the beginning, you have to add only 2 tbsp of water to start the process of caramelization. After the sugar caramelizes to the colour you want, turn off the heat. And immediately but carefully stir in 1/4 cup warm water. .All this is mentioned in the video.

Good question, Jocyleen. The thing is that all cakes tend to dry out after a week. To keep them moist longer, you have to wrap them in butter paper. However, this cake naturally stays moist longer because of two ingredients: Dates and oil. While butter cakes dry out fast, oil cakes remain moist longer. I don't know after exactly how many days your cake started becoming dry, but one reason why a cake can dry out earlier is if the consistency of the batter was not adjusted properly at the end. For this cake, the batter has to have a flowing, ribbon consistency, not a dropping consistency. No next time, pay attention to this point and also cover the cake well while storing it at room temperature. OK?

Veena am back again,was a little busy, I was taken up with the date and carrot cake and I want to make this, but grinding clove is going to be difficult, can I mix them with the other spices and grind it together, otherwise I will not get the fine powder that you got. Also can I use powdered sugar since I have it at home,if yes how much powdered sugar should I add. I have caramel color which I used to use for my christmas cake, can I use this, if so do I need to caramel sugar, these questions too many but would be happy to get your advice. I know you are prompt and reply for which I am very grateful, thank you Veena.

I read your subsequent comment first. And also answered your query. Yes you could grind the cloves with the other spices. You could try making a syrup with powdered sugar, water, and the caramel colour, but that won't give you the flavour of the caramel syrup. You'll have a brown coloured plain sugar solution.

@@Larry-qf7lw , you're welcome. I pounded the four cloves using a pestle and mortar. It was very easy to do that. Please don't powder a larger amount of cloves than necessary. If you don't have a pestle and mortar, grind the cloves with 2 tbsp of sugar, taking this from the rest of the sugar needed in the recipe. Hope this helps.

My pleasure to help you out here, Sneha. The reason why the sides of your cake became hard is not the quantity of sugar. The proportions are all perfect for this recipe. It could be that your oven temperature was too high or you baked the cake for a longer time. Try lowering the temperature a little and do the skewer test for the first time after 50 minutes. If it comes out wet, bake for another 5 minutes and repeat the skewer test again. Repeat the test after another 5 minutes if necessary. When cakes are baked at a much higher temperature or for a longer time than necessary, the cakes starts becoming dry along the sides. You can make the caramel a few days in advance. Then add the entire quantity of caramel made with 130g sugar to the cake when you start making the batter. The volume of your caramel will depend on how thick you made the caramel. If your caramel becomes too thick, the volume will be less. But with 130g sugar and 1/4 cup water , you'll get around 3 to 4 tbsp of caramel. Hope this helps.

Good evening, Jocyleen. I think it's best not to keep it outside the fridge for more than 6 days as it is a moist kind of cake. After six days move the cake to the fridge where it will stay good for over a month. Hope you have a great week too.

My pleasure to be of help, Lalita. In this cake, you won't feel the taste of oil if you use any refined oil like sunflower oil, rice bran oil, etc. The oil keeps this tasty cake nice and moist. But if you feel you would rather add butter, just replace the oil with an equal quantity of butter. (Though I recommend you stick with using oil. In many chocolate cakes too, oil is used to make them moister.)

Hi Jocyleen! Hope you're not planning on making one large cake. That would be a very heavy cake. It would be better to make two or three cakes with 9 eggs. For two cakes you'll need 4 and 1/2 eggs per cake. All the ingredients can be multiplied proportionately when using more eggs.

Veena went through the video, I will need to make the caramel syrup which I will do, I think only let me know if I can use powdered sugar but if you feel granulated sugar is better, don't worry I will use it. I will not use the caramel color. YOur caramel sugar looks superb.

You'll have to use granulated sugar, Larry. But in case you want a way of getting out of preparing the caramel syrup, you could replace this with dark molasses, approximately half a cup. You might need a little more. Go by the consistency of the final batter which has to have a ribbon consistency. (I however prefer the flavour of caramel syrup.)

You're welcome, Beena. Glad you tried out the recipe. About the dates, perhaps you chopped the dates up roughly and the pieces were too large. You have to chop the dates into small pieces. Or it could be that your batter consistency was too thin. This too could have caused the date pieces to sink.

@@beenathomas8262, there must have been some mistake in your measurements. With my ingredient proportions, Beena, there's no way the batter will be runny. But in case, you try out my recipe again, then for this or any other cake batter, if the batter for some reason turns out to be too runny, then add a few tablespoons of maida to it. Also, the carrots you use should not be the bright pink type that are too watery. Use the orange coloured firmer carrots that don't have too much moisture. But in case, the pink kind of juicier carrots are the only carrots available in your area, then lightly squeeze the grated carrots to remove some of the moisture. But don't squeeze the grated carrot compleltely either. Hope this helps.

Yes, you could use ready powdered sugar for the cake as well as for the caramel. But use the sugar by weight, not by volume. And sunflower oil would be more suitable for this recipe or any other cake recipe.

You could replace the maida with whole wheat flour. However, you will have to increase the baking powder by 1/4 tsp. The cake could be slightly denser but it will still be very, very tasty!
