Shoofly Cake and Pie are about PA Dutch as you can get. The cake is easy to make and nice because it's also eggless.
As to the name and where it came from, how did these pies/cakes get their name? The most logical explanation seems to be that the sweet ingredients attracted flies when the pies were cooling. The cooks had to "shoo" the flies away, hence the name shoofly pie.
Another story claims that this is really a French recipe, and that the crumb topping of the pie resembled the surface of the cauliflower, which is "cheux-fleur" in French. This was eventually pronounced as shoofly. Locals have a little problem with that explanation, and most of us have never seen this pie served up in the fine restaurants of Paris.
No less an authority on things Pennsylvania Dutch than John Joseph Stoudt states clearly that shoofly pies "are soundly Pennsylvanian, made in the earlier days with sorghum, later with molasses, and with brown rather than granulated sugar." Phyllis Pellman Good, in her book Amish Cooking, feels that these pies may have been common because "this hybrid cake within a pie shell" faired better in the old style bake ovens after the bread had been baked. With modern kitchen stoves, temperatures could be controlled and the more standard, lighter pies developed.
Warm shoofly cake right from the oven....mmmmm.
Shoofly Cake-
Crumbs--
4 C Flour
2 C sugar
1 C shortening
pinch of salt
pinch of cinnamon
Take one cup and set aside for top of cake.
Mix-
2 C hot water
1 1/2 tsp baking soda
1 1/2 C baking molasses
Mix together and add the crumbs. Mix well and pour into greased and floured 9 x 11 pan Sprinkle remaining crumbs on top and bake for 45 minutes at 350.
Shoofly Pie-
Mix for crumbs: (reserving ½ cup for topping)
2/3 cup brown sugar
1 Tablespoon solid shortening
1 cup flour
Filling:
1 cup molasses (good and thick)
¾ cup boiling water
1 egg beaten
1 Teaspoon baking soda
Combine soda with boiling water, then add egg and syrup. Add crumb mixture (this will be lumpy). Pour into unbaked pie crust and cover with reserved crumbs. Bake at 375 degrees Fahrenheit for 10 minutes, then reduce heat to 350 degrees Fahrenheit and bake for an additional 35-45 minutes (until firm). When cut into, the bottom may be "wet." This is okay, and is called a "wet bottom shoo fly pie."

As a NYC kid a Summer camp foundation called "The Fresh Air Fund" would send me to Manheim P.A. near Lancaster to a family who hosted city kids to be able to go to the country for the whole Summer. I went to the same family for about 10 years and was the Best time of my life. The mother used to make this all the time and taught me how to make this and many other Pennsylvania Dutch recipes. Now being an adult I make Shoo-Fly pie every Fall time for my friends and family and they all love it! This is my favorite cake as well as the pie. Never tried the butter though. Good Idea! Hope you don't mind that I adopt it.. LOL Thank you!

I'm so glad you got to experience that, both of our families hosted kids back in the 70's. It was a lot of fun for me as a farm girl to show off about the farm, milking playing in the creek etc with the city kids and showing them where their food came from! I'm glad to know it's had a continued good impact on people!

Some chore, it was fun as heck to me, the daughter there thought I was nuts!. I still visit the family who hosted me every year, I'm their New York daughter, LOL. I hope to move there someday once my hubby gets out of the Marines, Manheim is a beautiful place to raise kids. Thank you for hosting kids from the city. You have no idea what a "Gift" it is. Just saying, I'm from Lebanon PA, and this is the cake I remember and grew up with. Super moist, and gets even richer after chilling overnight. Lasts weeks in the fridge, and is the perfect after meal sweet. Amazing with milk of course

Wow, that is definitely going to go into my recipe box. Helga, I absolutely love your style. You are informative in a very relaxed sort of way, more like you're telling a story than imparting historical and factual information. And you do it while you're giving specific information for the recipe in a way that is easy-to-follow and not remotely irksome. I dearly hope that you are a teacher in real life. You certainly are a good one on KZfaq. Thank you for the cake recipe, but also for the additional pie recipe in the comments, and all of the very interesting information about the history and the possible explanations for the strange name.

I live in Northeastern, Pa near Jacktown. My mother makes this same cake, but she calls it molasses crumb cake. The stuff is addicting.

Helga, this is the recipe my grandmother and great grandmother made but instead of making it as a cake they put it in a pie shell and it was called "Crumb Pie" It is so good and now I'm going to make it as a cake with out the pie crust. Yea. It was always a favorite of my Dad and grandfathers for breakfast. I always look forward to the cooler months to make it, as that is when it seems to be better.

All I could imagine doing you you cut that piece of cake and pulled it out was me putting 3 or 4 spoonfuls of applesauce on it and then devouring it. This so reminds me of home (grew up in Mount Joy).

I like them two but my Aunt came up with a way to make the pie with twice the wet bottom so we tend to like that more.. Any way i really enjoyed watching the video.It brings back memories of helping my mom in the kitchen,,

I love shoofly pie. I will try your cake recipe. Occasionally I will find wixons shoofly pie around here but only at Rutter's stores in individual slices I can't help myself but to buy a slice when I'm out and about but it's nothing like the way my grandma made it. Never had the cake. Looks delicious. We are pie people. Lol...used to tease my friends not familiar with PA Dutch cooking about the name. Said contains flies. In old days they killed them with shoes that's how got name Shoe Fly Pie. Lol.. May need smarter friends!

Thank you Helga for the video. I loved it. I'm originally from Harrisburg, Pa. and when I was younger, my grandma used to make shoo fly cake and it was amazing. So I thought I would give it a try for my Mom tomorrow on mother's day. I just have one quick question. When you mix the butter with the flour and sugar, does the butter have to be cold or room temperature? I will try some of your other recipes in the future. Thank you so much again.

Hey Helga! I was so captivated by your video of this cake and so I tried it out yesterday. We all loved the molasses flavour and I added some cinnamon and ginger powders as well. The cake is a big hit in the house and I'm surely going to make it again. I have a question though : the cake was quite gooey at the bottom, so much so that I had to cook it way longer and it stuck to the butter paper at the bottom. Is that how it's supposed to be because of the wet batter? On top it was super soft, the crumb was great! Thank you for this wonderful cake ❤️

The only thing I can think of is maybe elevation (I'm at low elevation here at at 600ft above sea level) or type of pan may have played a part. The bottom will be moist but should still be cakey, if that makes sense. I've used both glass and metal pans and they can cook a bit different. I'm sorry it didn't come out quite right for you!

Hi Helga! I made this lovely cake again last week and it came out even better! I had to bake it for way longer and for the last 10 mins or so I cranked up the heat a bit and kept the oven on bottom only heating mode. That was a good decision coz, the bottom and the crumb layers were both caramelised well and chewy. We all loved it, so thanks once again ❤️😍

It's 1 1/2 tsp baking soda as in the recipe description, always check there, if you can. I know when viewing on tv you probably can't. Sorry i said the wrong thing!

While I don't know for sure, it may have been because your topping was worked too much making it finer particles so they sunk instead of being bigger broader particles to lay/float on top. That is a common reason.

She says to add 1 1/2 cup baking soda that’s wrong do not do that the cake doesn’t turn out right. The list of ingredients says 1 1/2 tsp of baking soda. Now I have to make another cake because I added 1 1/2 cups of baking soda and the cake is awful.

Boy, had everything all set for my ggrandmoms funeral. Well, your directions sucks. You said 1 1/2 cups, should have been 1 1/2 TSP. YOU SHOULD CHECK BEFORE YOU SEND OFF A VIDEO. Pisses me off.
