Yeah, waffles are good but most of the time, homemade just doesn't hit right. We're going to make a major correction to that by making mochi waffles, the classic Belgian liege waffle, and even a third an easy eggo style waffle.

100 percent real story: My crush was coming over one morning so I asked her what she craved for breakfast so I would have something ready for her. She answered waffles so the night before I found this video and picked up the ingredients for the mochi waffles. They ended up looking just as good as the ones from the video and she said they were the best waffles she has ever tasted. A little after feeding her and hanging out for a couple of hours she asked ME to be her boyfriend. Thank you Joshua

Liège Waffels are traditionally enjoyed with little to no toppings , fresh from the iron in a little folded paper wrapper . They greatly differ from Brussels' Waffels that have a much lighter dough that does not contain as much sugar , are long and rectangular in shape , and those are usually the one you drown under fruits , whipped cream or ice creams and various toppings and a drizzle of fruit or caramel or chocolate sauce . A lot of people have surely mentioned this before , but i feel like i needed to point it out anyway . Liège Waffels are great , but i personally find it a shame that Brussels Waffels are usually unknown worldwide despite the popularity of Belgian Waffles :D

​@@Hannah-ir8vr Yes , you have to whisk the whites separately until they become foamy , before reincorporating them to the dough . That is indeed what gives them their much lighter and fluffy texture :) Those are Brussels Waffles . Brussels is the Capital of Belgium , and Liège is a major city in Western Belgium , so both are Belgian Waffles :P

hey Josh ! I'm from Belgium and make Liège waffles for a living and I have to say this recipe is on point ! I would recommend to use some bigger pieces of pearl sugar (C40/C45, if you can get your hands on it, I know it can be difficult in some part of the world). That way you get some crunchy caramelised pieces of sugar while you bite into the waffle, and that's reallyyyyy satisfying and tasty ! Also, belgian fries for the next video ?

if we cant find pearl sugar can we just increase the 1/4 cup sugar in the dough to 1/3 cup to compensate for the omission of pearl sugar?

I once was in Belgium and ate a Waffle. It was like eating a divine piece of a heavens cloud, it was almost like cotton candy. It had so much air in it, you could call it a Luftwaffle.

@@chalkoneup326 It is indeed an important ingredient. If you can't find the pearl sugar in itself you might be able to find sugar cubes that you can break in tinier pieces with the heel of a knife :)

@@arthurdebbah4996 This is exactly what I did when I needed pearl sugar for the Liege waffles I made this weekend, and they turned out amazing. And since you are the expert on this subject, I assume that the light and fluffy "Luftwaffles" mentioned above were more than likely the Brussels style waffle that also has a yeast leavened batter, no? All of this waffle talk not has me ready to make more!

This would make a good new playlist, where Josh takes various versions of something and compares them. What I got from this is that both Belgium and Mochi have their merits, but those are the top 2 options that shine above all the rest depending on what you currently feel like. Next up do Fried Chicken, there are SO MANY kinds and I usually stick to Korean and Thai styles (depending on what sides I want with them).

Evenin' from the Lone Star State! Just wanna let you know that I made the Americanized version of these waffles tonight. It was delicious! My 5-year old son LOVES them! He said, with a mouth crammed full of syrupy-waffle goodness, "theeth are thuh bethest waffulth EVAR!" ("These are the bestest waffles ever!!!") Hands down, my husband and I agree. This is the 2nd recipe of yours I've made, and I'm buying your cookbook. You've sold me! Thanks so much!!

There's actually an additional style of Belgian waffles called the "Brussels-style waffle", which is square, has a light and airy batter, and is often served with powdered sugar. Belgian people know their waffles 🧇 😉

*Rectangular shape*. If I may add: Liège waffles are usually not served with toppings (though some do use chocolate sauce) as they already contain sugar, Brussels waffles are - as you mentioned - traditionally served with confectioner's sugar. Though sometimes, especially in restaurants, you can also get them with whipped cream, fruits, chocolate sauce and all that other fancy schmancy.

I love your videos. So fun.I didn't use a yeast dough, but used a cast iron waffle grid maker, it made alll of the difference. I had a really old waffle maker with removable cast iron grid. The waffles, whether I used standard batter: flour (any kind), baking powder/soda, salt, butter, 2eggs separated, fold in meringue) or just oats and water (gf flat bread), the y always came out perfect, slightly crunchy crust, but I'd love to try this, because apparently the yeast dough makes that texture. Thanks for sharing this!🥰

Love this review! Actually going to try mochi waffles tomorrow but personally I’m a Belgian Liege waffles kind of guy. Always love those crisp crust covered with crisp caramelized pearl sugar then chewy insides with crystalized sugar bits in every bite. I mean, it’s texture heaven. And the salty and yeasty bread just compliments everything. Also you don’t need toppings or syrup to enjoy it. 😍

Tip for everyone: When making the regular waffles, separate your eggs. Mix dry ingredients together. Mix wet ingredients (except egg whites) together. Add wet to dry, stir together, whip egg whites to soft peaks. Fold egg whites gently into batter. Proceed with cooking. You’re welcome. Found recipe in the 70s, forgot where.

It was possibly the _Better ‘Homes and Gardens_ cookbook. Their recipe calls for separating the eggs and whipping the egg whites. The best homemade waffle recipe I’ve found is called the "Waffles of Insane Greatness." I found it on a food blog I used to read, but the original can be found with an Internet search. They taste just like the waffles you get in restaurants and they are insanely fast & easy. The batter comes together in 10 minutes tops and then requires a 30 minute rest once it’s made. The secret to its celestial lightness is… cornstarch. Here’s the recipe from the blog with a few of my own notes set off by asterisks and parentheses. WAFFLE OF INSANE GREATNESS” RECIPE The original version of this recipe calls for 1 cup milk or buttermilk, but I split the difference and use ½ cup of each. The texture of the batter was lovely, and I liked the slight tangy quality of the waffles, so I’d recommend that you try the same course of action. * I use 1/2 cup of milk soured w/ 1 tsp. Of lemon juice because I don’t usually have buttermilk. I yields the same results.* Also, this waffle works in any kind of waffle maker. ¾ cup all-purpose flour ¼ cup cornstarch ½ tsp. baking powder ¼ tsp. baking soda ½ tsp. table salt (decrease to 1/4) 1 ½ tsp (1/2 TBLS) sugar ½ cup whole milk ½ cup buttermilk (or 1/2 cup of soured milk by displacing 1 tsp. of milk with 1 tsp of lemon juice. Let sit for 5 mins.) 1/3 cup vegetable oil, such as canola (or grapeseed) 1 large egg, lightly beaten ¾ tsp. vanilla extract In a medium bowl, combine the flour, cornstarch, baking powder, baking soda, salt, and sugar. Whisk well. Add the milk(s), oil, egg, and vanilla extract. Whisk to blend well, so that few (if any) lumps remain. Set aside to rest for 30 minutes. Preheat a waffle iron. Follow your waffle maker’s instruction manual for this, but my guess is that you’ll want to heat it on whatever setting is approximately medium-high. My waffle maker has a heat dial that runs from 1 to 7, and I turned it to 5. Oil the waffle maker. (Original text said oiling wouldn’t be necessary, but that’s so not my experience.), Pour an appropriate amount of batter into your hot waffle maker. This amount will vary from machine to machine, and you should plan to use your first waffle as a test specimen. Cook until golden and crisp. Yield: depends on the size and configuration of your waffle iron (~ 3 for my regular, non Belgian, waffle maker).

The waffle recipe I’ve always used and learned from my mom is like the American style but you separate the eggs and whip the white until soft peaks, makes a very light and fluffy waffle.

The only thing that disappoints me is that we didn’t get a cross section of the mochi waffle. I was interested in seeing what the crumb looked like compared to a wheat waffle.

I am a waffle geek, owning three different types of waffle makers. But it made me feel so good when I saw that Josh actually has the flip Belgium waffle maker which is one of the machines that I use, too. I've never ever thought of a mochi waffle but that needs to go on the playlist very soon. Thanks again for another amazing video!

I haven't made waffles since the 90s -- seriously. My mom bought a cheap waffle iron, and I wanted to make some. The instructions with the pancake mix (yup) resulted in a batter thicker than pancake batter, but definitely not as thick as that waffle dough! The purchase of the cheapest waffle iron my mom could find was inspired by the continental breakfast at a hotel on a recent vacation. There was a flipping Belgian waffle maker in the mix of it, and again, the batter in the cups was not as thick as what I see in this video. I've been wanting a (decent quality) waffle maker, and this episode just makes me want one more. So thanks for that, dude. You're convincing me to spend even more money.

In America the term Belgian waffle refers to the shape: thick, round, and with deep pockets. This is in contrast to the more traditional shape of thinner and square. Leige Waffles are referred to by name.

In my Japanese class we used to make mochi waffles and we would top it with random stuff, one of my favorites was with soy sauce, nori, and some other stuff I can't quite remember off the top of my head... my teacher recommended we all have a sweet one (with fruit on it) and a savory one as well

My fav type of waffle is the norwegian one, quickish to make, though not thick and fluffy, theyre thin waffles, it is soft and really tasty, u can use it similar to a crepe or english pancake where you put things like jam, cream or other topping on, or wrapped in them! My mum says in norway you would invite people round for waffles like you would invite people in for a cup of tea

Favorite topping for waffles are sour cream and raspberry jam. An amazing combination of tangyness, a lil bit and sour and just enough sweetness. Plus point if the waffle is a bit crispy, and a lil salty form the butter

Question Time: with the Belgian waffle can I pre-make the “dough” the night before and then pop it in the fridge overnight and cook it for breakfast the next morning? I don’t think I can wake up early enough to sneak in an hour of dough rising to surprise my partner with waffles 😭😂

Yes, I always make yeast dough the night before and put it in the fridge. The next morning get it out of the fridge and leave it for like 20 mins

Hmmm....despite what the first reply said (it's not a bad idea), for me if i leave a dough to sit overnight, the result just ends up tasting like fermentation and yeast... which imo is not a very good flavor for dough, especially for waffles. If you don't want it to taste like all your hard work has gone to waste and you don't want to start over, don't let it sit for no more than 2 hours.

Just made the mochi waffles for my family of 4, including my celiac daughter. She made a sandwich with the waffle, bananas foster (used bourbon instead of rum) and added bacon. Best waffle (and waffle sandwich) I've ever had. Thanks for the recipe!

I kind of want to see him make scandinavian waffles, since they are totally different from all the ones he has shown. They are like the crepes of the waffle world. Thin and usually made with cardamom these waffles usualle have individually heart shaped pieces within the whole waffle

Yeah, Swedish friend was telling me about these. There are only two waffle irons on Amazon that produce such thin waffles, but the pictures show that neither of them heat very evenly. I wonder what the Swedes use?

@@absolutelynothingtoseehere Even as a dane it can honestly be struggle getting a waffle iron that heats evenly but it's not meant to be perfect. You should probably search with danish or sweedish words to see the right ones. Waffle iron is called Vaffeljern in danish and that should get you some more results

Made the mochi waffles with Bananas Foster tonight. Instead of whipping the cream, I added a little sugar and vanilla and drizzled it over. As a New Orleanian I have eaten a lot of bananas foster. This was a good simple recipe and I wound up with some toffee in the pan, because I cooked it too fast, but there was a generous amount of sauce so it worked out. So the recipe made 2 Belgian waffles, they turned out *amazing*. I put 1/2 waffle and 1/3 of the sauce on each of 3 plates and we gobbled it right up. Solid dish, will definitely make again. 11/10. We licked the plates.

I used this recipe earlier to make american waffles. It was really good but I only used 2 tbsp of unsalted butter cause 3/4 cup just seems outrageous. Good recipe!

Am I the only one who measured 3/4 of granulated sugar out for the mochi waffles only for that to be more than double the sugar that Joshua actually used (I’m sure he actually measured out 70g which is less than half of 3/4 cup). They were still delicious, but overly sweet for sure.
