These potato pancakes will become your favorite anytime side dish. Make a double batch for breakfast then have some with dinner too. They are even good all by themselves with or without a little melted cheese or a dollop of sour cream. Bet you cant eat just 1

A few modifications; after grating the potatoes, squeeze them in your hands over the sink to remove excess fluid and starch. Finely chopping the onion yields a bit better separation and better flavor after cooking. Add a Tablespoon or two of lemon juice and mix well to bring the PH of the alkaline potatoes closer to neutral, it makes all the difference. By all means use clarified butter or bacon grease and you almost must use a cast iron skillet to get that deep crust. Place on paper towel to remove excess grease. Remember to salt a bit after cooking.

Thank God finally someone who knows how to make a potato latkes I’ve never ever squeezed and drained all the fluid out of my potatoes I feel it takes the flavor away 🥰

These are just like Grandma's potato pancakes and the way I still make them today! My grandma used to put a little bit of ham in them to sometimes. Topped with applesauce of course.

Aunt Susie....I used my hands for years, too. I'm 62 so I've been cooking a LONG time! I also have artificial nails and rings. I found plastic gloves on ebay for $1 for 100 about two years ago. I am hooked! I always hated having to stick my hand in things, especially meatloaf, but you have to for incorporation. Your mother is right...hands are the best! Being a former nurse, I was just always conscious of my nails and kept a nail brush at my sink to clean them. But, the gloves are great! Love them so much and I don't worry about the germs anymore :) Handwashing works....I was always more worried about what was under my nails :) Try them and see if you like them.....at a dollar a pack, you are not losing much :)

@@mrscashmorrisey1702 I disagree with you. It is why surgeons wash their hands for 10 minutes. It is why we wear gloves in surgery or to clean a wound. You cannot get the nails clean in a normal handwash. I had to teach my kids about washing their nails by scrubbing in the palm of their hands. Most people do not know that. Handwashing is the false sense of security. I taught my kids to say their ABCs but most people do a quick 15 sec wash. I was commenting on what I do, not what everyone else does. Do you honestly think that people who are smart enough to use gloves in their kitchen reuse penny plastic gloves? LOL I'll pay the dollar a pack to escape food poisoning, Mrs. Cash. LOL I wouldn't eat in your kitchen with that attitude.

Exactly how I watched my mother make them. We always have them with a side bowl of buttermilk as a cold soup with a little salt pepper and I still do this because I love it. Sour cream nice too. Thank you I just love you.

Wonderful video - loved it. I made some recently and placed the potatoes in a colander with a bowl underneath the catch the liquid. I placed a paper towel on top which I pressed into the potatoes to press out and absorb some water, then left it there to prevent the oxidation until ready to mix them.

After mixing the potatoes and onions you might want to squeeze the mixture through a cheese cloth over a measuring cup. Once the liquid settles, gently pour off the liquid and the remaining starch will be left in the bottom. Mix this potato starch with your eggs to create a nice binder for the latkes. Add this mixture to your potatoes and then fry.

Ring the potatoes out using cheesecloth or muslin prior to putting in the onion. This is something my grandmother used to do to make sure they're crispy..

My mom used to make the out of mashed potatoes also, hated them! Loved how my dad would pretty much follow your recipe and would fry the up in a good amount of bacon grease. ThT can’t be very healthy but goood!

Great food; I use almost the exact same recipe (I use a lot of black pepper, I love it) but after grating the potatoes and onions, you might want to try waiting for five or ten minutes then squeezing the potatoes/onions in cheesecloth to get the water out.

Hal Wakka I put them in cold water and let them sit for a while. You’ll get some of the starch settled in the bottom.i scoop out the potatoes carefully and drain off most of the water. You may need or want some starch and you’ll have some.

Water doesn't wash out the flavour, it just makes them crispier when they cook.

I love potato pancakes, when I was a kid, we couldn't eat meat on Friday, and potato pancakes were our choice for dinner, right behind a fish fry. Love mine with butter and syrup.

Your potatoes look scrumptious! When I make them I don't use flour. I add caraway seeds for a special flavor. Also, I feel that putting potatoes in an oven after there cooked may dry them out. Finally, I like apple sauce with my potatoes.

Oh yum...I remember these were my very favourite food as a child....I always used to say to my mum " When I grow up I'm going to make these for dinner every night" she would just smile.....I've made them a lot in 36 years marriage but not every night lol

First of all they look delicious. Secondly to the people complaining about the nails you are not eating the latkes this is an instructional video, would it be better if her nails were not taken care of, with dirt under her nails, broken, and looking barley. Keep up the wonderful videos and I for one is trying this recipe.

When I make rosti (similar, but no flour or egg), I grate the potato into a clean cloth, gather up the corners, and squeeze out the excess water.

I"ts also very helpful for having starch as little as possibile in the potatoes..bc it's drained out..Maybe very few people know. that for high cholesterol...it's responsible the starch that is in the food.like potatoes which has a high amount of starch.& not eggs..:-)

Looks GREAT!! As for the paper bag..always use unstained ones. Then cut them up, and ONLY use the INSIDE layer of the bag. Works fine. 😀

I like to ad dried rosemary and garlic granules in mine 👍 Thanks for the vid When we were kids 50 years ago here in Australia.. for some reason these were called ‘mock fish ‘ ! Always tasted good 👍 You could probably pop a bit of corn or peas in there too like a Vege fritter

I've been dong this with grated zucchini for years! I made up the recipe myself and had no idea that potato latkes were made the same way. The bit about draining off the liquid is even more important when using the zucchini. They seem to have a lot more moisture than potatoes.

Hey, you guys, my mother in law always had long fingernails and she was one of the best cooks I've ever known. Real cooking has always been "earthy". Chefs prefer using their hands. It's their personal touch. Taste their food. It's delicious!

My favorite poor man's meal....I'm watching for tips on less mushy...you illustrated some squeezing out the juice, moving the potatoes away from liquids building up in the pan bottom, and keeping the cooking surface sufficently hot...I'll try all those ideas !!

I use the cast iron skillet! but needs a lot of oil (about 1" of oil in the pan), and then go low and slow. The cast iron solves the problem of the uneven heat which is why you are turning the heat up and down. It's what cast iron does best! If you have a good cast iron that has developed it's patina food never sticks. Also, one tip for the liquid ... I get a sturdy, linen kitchen towel, put the potato AND the onion in the towel and then twist like a tootsie roll and keep twisting till it's squeezed out. The grated onion adds a lot of liquid to the mix as well as the liquid leeching from the potato. And ... just for giggles ... try adding other additives? I've done them with jalapenos, chipotles, chopped black olives (the best), diced garlic, and finely diced red bell pepper.. . get creative and have fun! I do parties for 10 or more and do small batches w different additives.

I agree Susies kitchen. My Mother and Grandmother did too , yes with lots of love and their hands were immaculate , but my dear with all due respect, you missed my point. I mean they they didn’t work in the kitchen with handling food with long nails. That was my point I was trying to make. The recipe is wonderful , and many ladies do have gorgeous nails, but maybe food gloves are a good idea when we want to have our nails. Just for when mixing or when the food can get in our nails. In the old days that’s how they did it anyway. I’m one of those old gals, so I consider myself kind of old fashion at times in the kitchen. The old gals thought that way anyhow.

Jodha Akbar: You said it! I'm not as polite as you so I will add that I found those nails very off-putting. Either one is a lady of leisure and lets the help do all the cooking, cleaning and dusting or one cooks and when one cooks (especially when one cooks and has one's hands photographed) long claws are off-putting in the extreme.

Washing the potato in water gets rid of the starch. Then squeeze them dry and then maybe air dry some so that your pancakes will be crispy.

Susie’s latkes look delicious. But I was taught that you had to lightly salt the grated potatoes and allow them to drain and then put the shredded potatoes in a clean tea towel and wring out an excess water there might be. Does anyone else do this?

Use to just take cold mashed potatoes and fry them in grease or oil and I called them potatoes cakes! .... Lol 😆 Funny Good video 📹 thanks ❤

my mom would add some (cooks in 5 min) oatmeal, that helps soak up extra remaining liquid and has no flavor but adds extra crunch. Your right about cooking on med/hi heat otherwise pancake can absorb too much oil.

For all those complaining about her nails, get a grip they're nails. You can clean them, just like washing your hands. I have long nails and I bake and cook all the time. My nails stay clean. Its called proper hand washing. I'd be more concerned with a person with short nails bad cuticles and hang nails.

I have discovered that by taking a potato ricer, you can squeeze a lot of the moisture out. Less messy than squeezing through a cloth.

Yes, make pancakes at home and stir with a spoon. Use an ice cream scoop to dish it out in pan. Scoops come in one fourth and one half cup size. That way your hands will not touch potato shreddes. Best potato recipe ever. Thanks.

Nothing sticks to cast iron unless it's not seasoned properly or unless you burn the food in it. Cook and wipe clean with a paper towel. My cast iron is my most prized possessions. I love your latka recipe.

These would be better on a rack instead of paper. Woukd remain crispier that way.

Sorry to be critical. I swear by a cast iron fry pan. It retains the heat. It's less likely to cool down a lot when food is added. I start out by preheating the pan on medium high. I keep it on med high the whole the. Then I add the oil. I found you do need a certain amount of oil for crispness. No, not swimming in it. Also, maybe I'm wrong, when you put the pancakes on a paper towel it's kinda ruining that crispness you were striving for. I put the pancakes on a paper bag to absorb any excess oil. I serve immediately. Thank you for hearing me out. Just my opinion.

Dianna Walker, I’m a shiksa so what the hell do I know? But I grew up with neighbors who were Orthodox Jews, Bubbe would always use a cast iron pan. When she moved into her daughter’s home, she gave my mom her pan because none of her daughters cooked. When my sister got married she took the cast iron skillet, her daughters now have dibs on the pan!

Many cooks insist on using metal, like a rack or strainer, instead of paper to preserve crispiness. I know it makes my stuff crispier.

when my grandmother made these for lunch, we kids had our choice of: butter and jam; butter and maple syrup; butter and sour cream. all 3 are great!

In traditional Jewish homes of Lithuania and Latvia pre world war 2, potato pancakes were served with apple sauce or simply sprinkled with coarse sugar. They were the traditional food (a special treat) for the winter holiday of Chanukah.

I've been making these for years and they are so yummy :) Yours look delicious. I prefer a box shredder too unless it's cabbage and carrots. When you've been doing something for 40 years, it is hard to change LOL I wish I could reach through the screen and grab one! I may have to make these tonight!

I'm still looking for a recipe similar to the way we made them at my parent's German Club in PA. They weren't processed down to a batter but more finally chopped than yours.

Adding 1/8th tsp baking soda with the flour will make browning much easier.
