Well chole or #KabuliChana is something which is liked by everyone and it is one of the finest source of protein that is essential to our body. Ingredients:
1 bowl soaked Kabuli Chana
3-4 Tea Bags
Water
For the Masala:
2 tbsp Cumin Seeds
1 tbsp Carom Seeds
1 tbsp Black Pepper
10-12 Black Cardamom
5-6 Green Cardamom
1-2 Javitri / Mace
Few cloves
Half piece of Nutmeg
3-4 Bay Leaves
1 big stick of Cinnamon
3 tbsp crushed Dried Pomegranate Seeds
For the Pindi Chole Recipe:
1 cup Ghee / Clarified Butter
1/2cup Oil
Boiled Chana
1 tbsp Powdered Spices
1 tbsp red Chilly Powder
Black Salt to taste
1 tbsp Coriander Powder
2 tbsp Dried Pomegranate Seed Powder
1/2tbsp Amchur Powder
1/2cup Tomato Juliennes
1/2cup Onion Juliennes
3-4 Slits of Green Chillies
Few Ginger Juliennes
Handful chopped Coriander Leaves
Water
To Garnish:
Tomato Juliennes
Onion Juliennes
Green Chillies
Method:
First take a pressure cooker. Put the soaked chana, tea bags and water and cover the lid. Allow the channa to boil for about 5-7 whistles or till it softens in texture.
For the Masala:
Take a pan. Add all the whole spices one after another and dry roast them for few minutes. Now first grind the crushed pomegranate seeds and take it out in a bowl. Then grind the roasted whole spices and grind them to a nice fine powdered mix. Keep it aside.
For the Pindi Chole Recipe:
Take a pan. Now separate the boiled channa from its water and take it out in this pan. Add all the powdered spices one after another and then put Tomatoes, Onions, green chillies, coriander Leaves, ginger etc. and mix everything well. Add salt and then put the hot smoky oil mix into this spice mixed chole. Add the excess boiled water of Channa and some more water and finally mix everything well and then cover the lid. Allow this to boil in lowest flame possible for about 10-15 minutes. Your Pindi Chole is ready. Enjoy with hot bhatura, parathas
