I have been a canner for decades. I had this happen with a jar of pinto beans last year. Yes, it freaked me out!! So much so that I snapped a picture and emailed it to you! You sent me a link to a video that explains this and really set my mind at ease. Thank you so much for your quick response and for all the help and support you give to the community. You are one of the only two channels that I trust completely. Thanks also for the response about using tomato puree vs fresh tomatoes. I recommend you to everyone.

Finally, someone has answered a question I have been trying to get addressed for a long time. Thank you Leisa!! I had thrown out a lot of canned food, mainly potatoes, before I found out the black and brown spotting was a normal happening with some foods. It is actually addressed on page 187 of the Ball Blue Book, Guide to Preserving..I was sure I had created something poison!! I hope all canners see this video.

I am thankful you made this video. I have been canning for 45 years and recently had this happen. My husband found a jar of turkey veg soup that had this. It was still sealed and smelled fine,but he insisted on throwing it out. Now I can share this with him. Thanks for sharing your knowledge. You are a blessing and inspiration even to us older canners.

The first time it happened to me, I was flabbergasted. Wiser heads calmed me down, but between this and siphoning, I learned to be a real stickler on head space.

I had this happen with beans, just two weeks ago. Thought it was mold, threw out the two jars I opened, almost emptied and threw out the 7 cases I had canned! THANK YOU. THANK YOU. THANK YOU!

I’ve been canning for many years. I started as a child learning from my mom. I’m 55 and still enjoy it. I had this happen to me, for the first time, about a year ago. I tossed one jar but realized there was no smelly food, my lid had a great seal so I regretted tossing the jar. Yep, jar and all thinking it was mold. I opened another jar, same issue but we ate they food. Absolutely no issues. I’m so glad you put out this video now I’ll rest easy if it ever happens again. Thanks Leisa.

I am very new at canning. I was so proud of my first batch of ugly chicken which I made up a few months ago. When I got one out to make an instant pot meal and opened it, I was HORRIFIED! This black stuff was on the edges of the inside of the lids. I just knew I had screwed something up and nearly killed my family! THANK you for posting this video!!! I nearly threw out ALL of my beautiful ugly chicken. Thank you for saving my stash and my sanity.

Great info. I guess this is why we are always told not to reuse lids. I have reused lids for dry canning afterwards but not for pressure canning again. Although, many of my "hillbilly" friends (Older relatives, and very wise ladies from West Virginia) would be considered rebels. But between a select few (3) here on KZfaq and these awesome ladies, I picked canning back up. Wished I had paid more attention to my Granny when I was growing up. I'm 60 now (omgosh, I blinked 😳) and am trying to remember what I was told when I was 10, not so well but thankful for my hillbillies and the 3 of you KZfaqrs, I'm trying to get it right.

60+year canner. I have seen this. Mama said if it doesn't make a hole in the lid, take off the top layer of food, if it's discolored. If you are scared, but the only option is going hungry, several reputable colleges and websites say bringing the food to 121°C/249.8°Ffor 3 minutes will kill even botulism spores; the worst of the worst. Might not be as tasty, but you won't starve.

I understand the method to kill botulism spores, you’ve got to bring the temp at least 121 C which is above boiling point. So it must be pressure canned. But what is the temperature to kill botulism toxin ( not the spores they can lead to the toxin) if you don’t remember if you pressure canned the food accordingly? Some people say boiling (which is 100C) for 10 minutes. I really wish to get a scientific answer to this.

@@cbass2755I double checked my notes. The internet says boiling will get high enough to kill the toxins and everything else bad except spores. I have a small pressure canner, so I'll err on the side of caution.

This happened to me once on some tomatoes I canned. I was a beginner canner and thought I ruined my tomatoes. I threw them all out. Thank you for letting me know about this. I haven’t had it happen since but knowledge is everything. Thank you ❤

WOW=just in time....as this occurred LAST NIGHT!!!! My seal was perfect (did not have siphoning and there was good headspace), smelt good, tasted good, nothing on the meat itself...and I am still here today. Live, learn, and move on....but thanks for the insight.

Yep I’ve had this happen to several things. What I have discovered is that if there are little scratches on the enamel of the lid that is where the black is. I really look over the lids now to make sure they aren’t scratched.....I find brand new ones that have small scratches, probably from packing.

Yes I HAVE had pinholing it absolutely freaked me out! AND... I did have one jar (it wasn't that old maybe a year) actually eat through the lid... that really freaked me out. Do yourself a favor and check your pantry OFTEN cause stuff happens. happy canning everyone. Thanks Lesia I hope you feel better soon, GREAT livestream earlier!

I have been canning for 1-1/2 years. This happened on one of my pints of pork summer last. It looked like a spec of mold on the underside of lid. I probably should have freaked out, not sure why I didn’t. I guess because the can had an excellent seal and the food looked and smelled great. Ate it and forgot all about it until this. Very good to know.

Have to add…this is a text book example/reason why NOT to reuse lids. I’m always screaming at my screen when some canners say they reuse their lids. Usually those are the same canners that aren’t following safe canning procedures too (and yes, I do say something in their comments when I see their videos). Thanks again for another great educational video.

As always, thank you, Leisa! I've had that happen a couple of times. Freaked out, put on gloves, emptied the jar then sterilized it. (rolling my eyes) If I see it again, I'll be able to stay perfectly calm, and enjoy my food. Hugs from Crazy California!

Yes! So glad you talked about this. I canned black beans and have some jars that did this. I started using the Forjars lids (which I love!) and was kind of freaked out. Not all of them but some of them and they were sealed. I was terrified when I opened one and found it. Looked just like a few of your examples. The day I opened mine I started googling in a panic and found the info but it is good to hear a seasoned canner I have been following and trust bring it up. Funny the day it happened... I opened the can, prayed over the food and heated it up after googling of course.. but I was still a little nervous. I am alive to tell the story and didn't get sick, so I am thankful. LOL Thanks for talking about this.

Last year I bought some new Ball jars for canning. It was not my choice to get Ball, but it was all that I could find. I knew there had been some controversy over their lids not sealing. Well, what I discovered was ridiculous! The factory has screwed down the lids so tight, they were, in essence, already used! So I kept them for dry foods and replaced them with decent ones. I also found out that most of my unused old lids were viable except for Kerr that had a gray seal. Those seem to separate from the lid with use. I threw them out.

Thanks for the follow up, I was the one in the FB Group a bit back who asked about this happening on both my ball and ForJar lids...These pictures are just what the lids on my jars look like... I read about this problem in one of the ball books and separated all the jars of beans and potatoes that have this happening... but could not make myself throw them out yet... Im so glad I've waited... Thanks for the video!!! Now I can put them back on the shelf to await the dinner bell!!!!❤❤❤❤❤

Found on pinto beans most recently and also tomatoes. Scares you to death thinking of awful pathogens. Really appreciate all the pictures and explanation. Tomatoes I thought acid had eaten through the coating. Beans however, confused me.

My white beans had this on the lid. My first canning. I was sure I had done something wrong. I threw them out. Caring for a 92 year young mother. Not taking any chances. Thank You! Had searched for an explanation-never found the answer. 🤗

Here in Ireland there aren't many canners to share tips with, so this is exciting for me I have had it happen on potatoes!!! I thought it was me, but they were sealed well and smelt fine and tasted ok...we've eaten them but I still had that little niggle in the back of my mind. Thanks for getting rid of it!!!

This past year was the first time I had it happen, to 3 of my ugly chicken jars out of 24. I figured that i missed a defect in my lids (kerr) and it was rusting or using an 8 ounce jar was over pressuring the lid and causing the missed defect to deteriorate with black rust. so i threw out the food and sterilized the jar in my old pressure canner. Thank you for this video. It is greatly appreciated. Thank you for all that you do for us to set us at ease.

That has happened to me a couple of years ago. I made meat balls and ended up throwing them out. Then I learned that it was okay. But I always say if in doubt through it out. I now know better. Thanks for sharing This will help a lot of people so they won't throw away good food.

I have had this happen for beans and ugly chicken. I assumed it was flecks of bean skins or something from the chicken and went on my merry way. However this is good to know and I thank you for the good helpful information you always provide

Thanks! I have experienced this a couple of times. Didn’t trust it and threw it out. I’d probably throw it again and follow instructions better next time. At the time I had no idea that I was not using safe canning guidelines anyway. I knew that green beans needed to be pressure canned but didn’t know why and that my mom was terrified of pressure canning them because of botulism and explosions she had heard of and that was why she wouldn’t can anything but jams, jellies and peaches. Her mother canned everything and I’ve seen the letters grams had written to my mother in the 50’s and 60’s describing the cost of bulk produce and canning of that produce. I was not exposed to canning or gardening growing up and almost none of my 7 other siblings do any canning. I did not know for YEARS that I wasn’t doing it right. No one died, thank goodness. Thanks again for all of your safe canning vids!

Thanks for addressing this. I've had it happen and it is worrisome - and confusing. I made chili. The jars sealed and there was no siphoning, but when I popped the lid... hmm. There it was. My canning cousin said it would be fine so we had dinner and we're still here :) I really appreciate you sharing our knowledge and experience.

I bought off brand lids when lids were so scarce. Nearly every jar I canned with these lids had pinholing. So frustrating. I threw several jars away before I found out what it was.

Yup I've had it happen, don't recall what it was on jar of though, either chicken or maybe pork. PS: You really should consider a "Trust the Process" tshirt for you shop : )

Thank you for this info. I’m new to canning and found 2 of my turkey soup jars had these black spots. I freaked and threw them all out. 😢 Just opened 2 jars of chicken soup and found this. Decided to research. Read in the Ball Blue book that it isn’t a problem. My jars were sealed and all looked good. Thank you for sharing actual photos of this. Looks exactly like my jars. It really helps to SEE what it looks like. Now I’m sad I threw out my perfectly good turkey soup.

Oh yes, I've had this happen to a few jar lids. I knew I had done everything correctly and thought there was something wrong with the lid. Luckily it only effected one jar out of a batch and I only threw out the food in that jar. It is so good to know for sure I was right and that the food would have been okay. Thank you so much.

This just happened to me tonight, opened my jar of chicken and ham soup, and black spots on the top. It was sealed and didn’t smell off but I threw it away, then started doubting the other jars of soup I was warming up for my family… I didn’t see this video before I threw it away, but this video has put my mind at ease, thank you :)

I did have that happen to me when I first started to can. It freaked me out and I tossed the food. I was new and didn’t have faith in my canning abilities. I have never heard it come up in any conversation until your live video the other night. Now I know. Thank you.

I had it happen within the first year and a half of my canning adventure. I think on a can of russet potatoes, actually. I came to the conclusion that it was not mold, there wasn't any sign of spoilage anywhere else, visual or smell. So I went with the precaution of boiling it for ten minutes minimum, and all was good. This is really nice to know. I haven't seen this information anywhere else.

It’s happened to me several times. I’m embarrassed to say that I hadn’t started being exact about my headspace. I’ve only been canning a few years. I now watch tons of videos and try very hard to pay attention to detail. Thanks to Leisa and several others that I trust. Thank you so very much for this video. 😊

Thank you so much for this information! Lately I have noticed these "pin" whole aka black spots. I discarded all the jars. Most of it was with "ugly" chicken and pork as of recent. But, back in August my husband canned asparagus and he threw out 3 quart jars because of it. Thanks again!

Thank you for this. I am very new to canning and I did some pinto beans and saw this stuff in my jars at the top and thought .. yeah I am going to have to toss it because I had no clue what it was. I feel so much better now and not lamenting over the money and food I would have to throw out.

It has definitely happened to me. I was so upset when I first saw it. Then I remembered that mold can’t grow in a vacuum, and the jar was definitely sealed. I googled it and found out what it was. Thank you for making this video.

Wow! This just happened today! Chicken salad that was canned 2/2021, opened with a pop and lid had several black spots and some was floating in the broth. I figured it was safe because I had heard of this before. I made my lunch and ate the sandwich. I figure now I better use up the other jars I have left pretty soon! Thanks Leisa for the reassurance I needed it!

If you boil water and put SALT in the water before the water comes to a full boil, the salt falls to the bottom of the pan and can/will "PIT" the bottom of the pan. If you look at the inside bottom of your pans, you might see pitting. I'm thinking that it might be from salt. If you put your salt in your jars last, that could be what is pitting the lid during the canning process.

Salt can cause it. But I never add salt and it has happened to me.

@@SuttonsDaze I have experienced the lids like you showed, but I smelled it first, then I dipped my finger in and tasted it, and it was fine. I threw the lid away though.

If I could reach through this computer, I’d give you a hug. I’ve thrown out so many jars because of this. I thought the black was botulism. The black was always on the white part, not on the rubber part. I’ve had this with yukon gold potatoes, chicken bean soup, and stew. THANK YOU!!! By the way, I’ve been canning for 20 years and when I first found this, I really freaked out, and blamed my jar lids.

Leisa I just love your channel. You give the best information and make it where we can all understand. You inspired me to can ugly chicken first and yesterday I did ground beef, sausage and one can of beef/sausage just to use up the left overs and fill my canner. OMG! I opened a jar of my garbanzo beans last night and saw this. I thought it was mold so I threw it out. Thanks for the info, I wish I had seen it earlier.

The potatoes that had pinholing on the lids today were russets. That was my first time canning store bought potatoes. (I'm not impressed with the texture of the canned russets.) I really appreciate you taking the time to make this video! Thank you!

It happened to a jar of asparagus. I threw it out. Black stuff on the lid freaked me out. There were no pin holes.So glad you posted this. Thank you!❤️

Opened up a jar of pinto beans last night and had a little bit of that. The beans were great, though. No issues. It happens with quite a few things, but as long as my seal pops when I open it, and it smells good still, and it's not going into the food, I haven't yet worried about it. I know I did my part right.

I've had it happen with chicken before. Had to go in the "way back machine" to when my Mom used to can and remembered something about it - enough to keep me from panicking until I could look it up. Can happen to any/every canner at some point. Keep canning!

We canned as a kid and I have raised a few gardens but never really got back into it until 2020 now we're canning and dehydrating and soon freeze-drying

This use to happen all the time with different foods. The water we had was full of magnesium, calcium, Iron, etc. I would by water to use at times when I wanted a batch to look better. The amount of this effect would change some depending on if the cities' filtering system was up and running well. When I moved to a new area with wonderful pure water, never saw it happen again. Exception being quite old jars of tomato products.

Wow, thank you! I have not had this happen YET, but now I will be able to handle it. I am definitely one of those who would have "freaked out". We have restarted canning this past year after 20 years of not canning so this would have thrown me for a loop.

I'm relatively new to canning, and I've seen this in my lids. I've Doyle checked everything, and it was fine. If the pimple is a , ok. Having said that, if the jar doesn't sound right when I open it, it goes out. Or it definitely has a pimple it's out.

I started canning again last year so I'm a little neurotic and check my home canned good every week or so. This week I found my first broken seals (one was potatoes with carrots, one was just potatoes). The lids different brands, but hey neither was a For Jars lid.

Awesome. I will keep an eye out for this. I am guilty of throwing out a case of green beans from my garden because I was unsure of my canning. This will prevent me from making another mistake. Thanks for sharing this information!

I have had this happen for sure!!! I was in the hospital and my son opened jars of our stewed tomatoes. He decided to dump half a case of my tomatoes because it had black mold on the lid he said I said nooooo!!!! That was not mold it happens sometimes and asked if there was mold on the food he said no but better safe than sorry. I taught him when in doubt throw it out but dangit... we lost half a case of our home grown tomatoes! Oh well, now he's educated I show him each time I open the jars if they have the black spots on them.. We eat it and don't die lol

Thank you for covering these. I've had this happened to me sever times over the past 20+ years. First time I was a little freaked out, but I mostly have had it happened with Ball Lids. I check my contains out really good when I find this. But my jar Constance has always been good. I just thought it was either I filled the jar to far or from siphoning or the lid compounds have changed
