Serves12:
For the syrup:
1 and 1/2 cups water
1 and 1/2 cups granulated sugar
peel and juice of a large orange
1 cinnamon stick
​For the pudding cake:
1 pound phyllo, thawed and at room temperature
5 large eggs
1 cup vegetable oil
1 cup plain yogurt
1 and 1/4 cups freshly squeezed orange juice
3/4 cup granulated sugar
​1/2 cup orange marmalade
zest of 2 large oranges
1 tablespoon baking powder
1 teaspoon pure vanilla extract
1/4 teaspoon salt
optional: 1/4 teaspoon ground cardamom seeds
​Preheat the oven to 350 degrees Fahrenheit, 176 degrees Celsius.
​Remove the phyllo from its packaging and keep it rolled up. Thinly slice the phyllo and spread it on a clean work surface to dry up. About 1 hour.
In the meantime, make the syrup by combining all of the syrup ingredients together in a small saucepan.
Bring to a boil. Reduce to a simmer and cook about 5-6 minutes. Remove from heat and allow to completely cool.
​Beat the sugar and eggs together until thick and pale yellow in color.
​Whisk in the olive oil, yogurt, orange juice, salt, vanilla extract, and marmalade.
​Mix in the phyllo slices, a handful at a time. Use 2 forks to mix them in evenly.
Fold in the orange zest.
Pour in a 9 inch by 13 inch baking pan.
​Bake for about 1 hour. The cake will be golden when ready.
As soon as the cake comes out of the oven, poke some holes with a skewer or tooth pick and pour the syrup over it.
Allow to cool completely, about 1-2 hours, before serving.
​This cake is very sweet. It tastes best with unsweetened whipped cream or with dark chocolate ganache drizzled on top. Some bittersweet chocolate curls would also taste fantastic with this cake.

This came out excellent!! I have made your spinach pie & that was great too! I will never cook the spinach again. I ate a really large portion of the portokalopita for dinner & I’m looking forward to making your next dish. I live with a Greek man & my mother in law passed away & I miss her & her food so much. Thank you for bringing me closer to her by cooking these dishes.

I made this last year and everyone was asking for more. In the future, I will take a shortcut and buy freshly juiced orange juice, as doing this by hand took me way too long. I meticulously followed each step and the dessert came out better than expected. Just so delicious! It held up very well in the fridge for over a week. Now, I just need to come up with the energy to do it again, because we haven't stopped thinking about it since!

I will try this soon! Thanks for the video. I wonder is there a dessert which is a bit like rice pudding, but with shredded phyllo in it? I think I ate it in Cyprus.

How unique! Love orange and cinnamon. I do have a question about cardamom though. When grinding do you grind the whole pod shell and all or do you crack, remove the little round seeds inside and just use those? I have searched around and can't really find a definitive answer.

maylien just open up the pod and only use the seeds. Start with one or two because their flavor is super concentrated.

Your video says 350 degrees but your written description says 325. Also, you show on the video that you added baking powder, but you don't have that in the written description.Just made this for the first time (it's cooling right now) and followed your video (so used 350 as my temp). Also, guessed at the baking powder (looks like you used a teaspoon) and added that as well.I had to use the drying in the oven method - and ended up at about 6 minutes to dry out. Seemed to work well.Really looking forward to having this for dessert tonight. Hope it turns out okay. Thanks for the inspirational videos!

I notice you did not spray or grease your white oval dish before pouring the mixture into the dish, is that correct??
