Titli, please try the Filipino dish kare-kare. It's also peanut sauce-based, but the protein is beef (we use brisket). Tripe is also a must! You also add lots of vegetables, especially the banana "heart". Super delicious!

Could you please explain, what do you mean by "waxy" potatoes? (Sorry, I'm not a native english speaker, and we have different names for the different kinds of potatoes. That is when they bother to put up a sign in grocery stores, that have more information than 'these are potatoes'.)

Dunadi There are two main types of potatoes - 'floury' potatoes and 'waxy' potatoes. Floury potatoes have a high starch content and are good for baking, frying, mashing, roasting and making chips. They're used in things like gnocchi because they're easy to mash and help bind the other ingredients. Waxy potatoes are higher in moisture and have a low starch content. They tend to retain their shape after being boiled and as such are perfect for things like soup, potato salad and casseroles. So, when making this dish, you'd want a potato with a low starch content and higher moisture. Some examples of each potato variety are: Floury: Ruby Lou, King Edward, Atlantic, Eureka, Harmony, Kestrel and Mozart. Waxy: Nadine, Desiree, Bintje, Dutch Cream, Kipfler and Pink-eye (Southern Gold). Hope this helps :D.
