Shrimp shells are extremely important for building a flavor base, I have been making lots of recipes where I always mention this.
Making a prawn bisque is an excellent idea to use up the shrimp shells and heads.
Ingredients List:
Shrimp broth:
- About 300 or 400 g of shrimp shells and heads (the more the better)
- Leek
- Carrot
- Tomato
- Celery
- Onion
- Olive oil
- Tomato extract
Shrimp Soup:
- 1L of shrimp broth
- 60 gr of butter
- 60 gr of wheat flour
- Shrimp for garnish
- Salt and pepper
Croutons:
- Cubed white bread
- 2 garlic cloves
- Thyme
- Salt and pepper
- Olive oil
