If you've been missing bagels on your gluten-free or low-carb diet, look no further. 1 whole bagel is 12 grams of carbs, that means for you keto folks you can eat this and still maintain ketosis especially with metabolic flexibility. When compared to a Dunkin Donuts plain bagel, they have 64 grams of carbs with an ingredient list full of toxins, inflammatory ingredients and no nutrient density. This pumpkin paleo everything bagel is made from whole food ingredients including pumpkin puree for a boost of vitamin A, eggs for choline and B Vitamins, and almond flour for fiber and vitamin E. INGREDIENTS:
1 cup pumpkin puree
4 pasture-raised eggs
3 Tbs avocado oil
1 tsp apple cider vinegar
1 Tbs bone broth
1 1/2 cups almond flour
1/4 cup arrowroot flour
2 tablespoons coconut flour
1 tsp baking powder
½ tsp sea salt
everything bagel seasoning
flaky sea salt
3 oz cream cheese
6 oz smoked salmon
½ cup microgreens
DIRECTIONS:
Preheat oven to 350 degrees and grease a donut pan with avocado oil spray. Whisk together eggs, oil, ACV, pumpkin, and bone broth together until fully combined. Mix in the almond flour, coconut flour, arrowroot, salt, and baking powder and mix until smooth and there are no clumps in the batter. Fill each donut mold with batter then sprinkle seasoning liberally on top.
Bake 18-22 minutes until golden brown and a toothpick inserted comes out clean. Top with a pinch of flaky sea salt. Allow to set for a few minutes before removing from pan. Slice in half and toast. Slather with 1 oz grassfed cream cheese or topping of your choice (hummus works great for dairy free) and to boost protein include 2 ounces of wild caught smoked salmon. Top with microgreens.
Note: leftovers freeze and toast well but we doubt you’ll have leftovers if other family members catch sight of these!
