I've made these before, using refrigerated biscuits, and have made both sweet and savory pies. They are indeed very delicious! I once worked with a lady who had grown up in the hills of Arkansas and she told me about her mother making these using her own biscuit dough recipe, and to fill the little pies she made a mixture of cocoa, sugar, and butter. They were sealed up and then fried in shortening in her old cast iron chicken fryer. She remembered her mother standing at the old wood burning stove making these little pies and how good they tasted fresh from the fryer. There were 13 children in the family and these made a cheap breakfast to feed all those hungry mouths. I loved her stories about her early life and how creative her mom was in feeding all those kids. These videos are such a treat Paula, and they always brighten my day. You are a treasure!

Finding this video makes me so happy. YOU, Paula, you make me so happy. Happy and calmed and comforted. I have been a fan of yours since I watched your first BEST DISHES episode. Watching your show then helped me just like watching this video is helping me now. I'm a small town Tennessee boy who moved to Chicago years ago and have grown more and more homesick for the South with each passing year. Finding your Food Network show was such a blessing to me. Watching you cook, learning from you, and laughing with you on that program was like being home again, watching, learning from and laughing with my mama. You brought my mama's kitchen into my Chicago apartment in every episode and helped me feel less alone up here. I can't thank you enough for that. And tremendous thanks for doing these quarantine cooking videos. They mean so much so to many of us, more of us than you may even know. Your recipes are the best (every potluck I attend or dinner party I throw is a huge success because it all comes from one of your cookbooks), your personality and humor keep us smiling and laughing, but your greatest gift is your ability to simply be you, to be present and open enough to allow all your kindness, your compassion for others and your generosity to shine. Thank you for, once again, making life better, brighter and happier for this Tennessee boy. Much love to you. P.S. I'm flying back to Knoxville this week and hopefully, your restaurant in Pigeon Forge will be reopened in some capacity. God bless you, Paula! You're saving our sanity with these sweet little cooking shows. Thank you so much for doing this for us! You're a doll and we love you so much!! As far as ideas: We've been in quarantine for 3 weeks and I am all out of fresh veggies and fruit with no way to go get more at the store. So, I'd like to see quarantine recipes that use canned and/or frozen items. Also, we need comfort food recipes - maybe some casseroles - you pick. We'll love whatever you decide to cook for us. Hey Mrs Paula!! I Love you and so glad I found you again!! I call your Cookbook my Cookbook Bible. I’ve made so many of your recipes. I always make a Paula Dean dish to EVERY covered dish I need to take one. I get so many compliments on the food I cook from your recipes. My family has favorites and ask for them all the time of course I oblige them and make it because I am a true southern mother/cook 100% born and raised in Georgia Southern runs in my blood. Best place in the world to live never meet nicer people in the United States. You just can’t be that southern hospitality, accent and of course our wonderful delicious southern homemade 100% love going in to every dish we make. Our families love and look forward to having these delicious dessert/entrées/appetizers made for them. I just wanted to take this time to truly thank you for bringing true Southern cooking the south has to offer . I love you Paula Dean❤️

When food network took your show off the air, I refused to ever watch that channel again, and I still don't. I watch every video I can ever find of yours and of your boys, and I buy all your cookbooks and magazines. I live in Albany, GA, I was in the tenth grade at Albany High School when you were in the 12th. My parents went to River Bend for their honeymoon in 1947. I see your boys Dad every now and then in Albany. I met you and your boys and their Dad by accident one day at Merry Acres Restaurant. I especially remember how sweet and sincere your boys were. I'm so amazed at how a little girl from Albany became so successful. You're one in a million. I wish you and your family continued success.

If you don't have an air fryer, put the pies on a rack over a sheet pan (line with foil or parchment for easy cleanup) and bake in the oven. Use the convection setting if you have it. I don't have puff pastry or canned biscuits on hand but I could make a pie crust dough to use.

I really enjoy watching your informal you tube "Quarantine Cooking" episodes! Crazy times for sure, but you bring it back home, and keep it simple and real. My husband and I just visited your Family Kitchen in Myrtle Beach the first week of March, and loved everything about it. We were visiting from Canada and I had that on my bucket list! We had been in Savannah in 2008, but never got into The Lady unfortunately. You are right when you say, that "this too shall pass". Stay safe, and thank you for entertaining us during these times when the world is upside down. ~~Mavis~~

Oh I've been seein' your videos on fb about givin' away air fryers. You have such a sweet heart Miss Paula! I'm Rachel Anne on there and I've entered to win a couple times. I would love to be able to cook in an air fryer when my daughters are finally able to come see me. They've become quite the excellent young cooks at 24 and 20. I started them watchin' you when they were little, and wouldn't it be somethin' to tell them you you gave us an air fryer! I love listening to you talk too, cause your voice sounds like my Momma. She passed 20 years ago this February. My oldest remembers her and we always talk about her when we watch your videos. Thank you for everything you do, Miss Paula. Back in 1957 I moved to Texas with my parents and we went to a little restaurant in our neighborhood. They sold fried pies for dessert. While we ate our meal we tried to figure out how they would put a slice of pie into the deep fryer without it breaking all apart. So naturally we had to try them...apple ones...when the man came out with them Mom says oh they are turnovers...We had a big laugh over that. Also told the man we were from Canada and couldn't figure out how he was going to fry slices of pie. He got a big laugh too and didn't charge us for our very first Texas fried pies. My grandmother used canned biscuits for fried pies and chicken dumplings. She made apple, peach, raisin, and apricot. She made the filling out of dried fruit. I do the same. Her chicken and dumplings were the best ever. On Sunday after church we would go to Ma and Pa, the whole family, eat Sunday dinner. She would have 2 meats, 3 or 4 vegetables and 3 desserts. She made a 7 layer Coconut Cake. It would have to soak for 3 days. I miss Mom, Dad, my sister, Ma and Pa I am so happy to see you on You Tube. I love you. I would love to go to your restaurant in Pigeon Forge, but it's just me and I feel out of place eating in a resturant alone. I usually get take out. I don't know if your resturant offers take out. I just saw an aerial view of Pigeon Forge it is surreal. No cars anywhere. None on the road , in the parking lots at the hotels. I have never seen anything like it. I have lived here all my life. I live in the county and have no stay at orders. I go to work driving a taxi at the airport. We are considered essential at the airport. Sitting all day long and not getting a trip is just depressing but I believe everything will come back roaring to life because everyone is getting cabin fever. Love ya much 3

No where in my post did I say she should wear gloves. She should have washed her hands to show cleanliness within her home and kitchen. Everyone would be very upset if they went to even a small mom and pop restaurant and saw the cook touch their nose and not wash their hands

My grandmother too! Her name was Honey, born in 1900 & she was not a baker! But using these biscuits back in the 60’s, she would peel the layers into thin ones, dip each slice in melted butter & fry in a skillet. Oh my goodness they were so good & crispy buttery. Never made them myself. Peach is my favorite. Had store bought Peach 🍑 Turnovers last night & they were nothing like back in the day. There was NO filling but just a smear of peach jam & of course no packet of "icing." Good to see you again!

Thank you so much for sharing Miss Paula!! I love watching and listening to you and trying your recipes!! I got a chance 2 years to come to Georgia. My daughter lives in Statesboro. We got there by plane so we came into Savannah, where my daughter picked us up and took us to her house in Statesboro. But later that week she took us back to Savannah to site see a bit. We were going down this one street and my daughter said " mom, look up there". There was a sign and it said "lady and sons". E got a chance to slow down in front of it but didn't get a chance to really look in very good.I wish we could have gotten a chance to go in, but we didn't have a whole lot of time or money for much splurging. Sissy knew I really wanted to see you and your restaurant. So I at least got to see your restaurant. Savannah was beautiful even though that hurricane had been through there just days before. Tibee Island was closed til the day before we came home. But we did get to go out there. Thank you for coming to KZfaq!! God bless you and your family

If you have fresh blueberries, add some of them to the canned BB pie filling, because that BB filling is mostly all thickening , and very few actual blueberries. It used to be a good product years ago, but the Duncan Hines company has cheapened it. My mother used to buy their Spice Cake mix and the Gingerbread mix back during the 2nd World War...probably about 1942/1944. She made me sit at the table and watch her make it...Then it became my job at age eight, and she didn't have an electric mixer...just a big brown bowl, and big spoon. And, I had wimpy little girl eight year old arms. I was so short I had to kneel an a kitchen chair to be tall enough to beat the batter. Mama didn't have time to cook because she worked at the Bomber Plant making the B-52 Bomber planes during the war. All that happened about 78 years ago...I can't believe I'm mid eighties in today's life, but I am. Boy!!! have I seen so many changes in this world, both good and bad, especially in cooking. Back then, the steak was floured, salted, peppered, then pounded with the edge of a heavy saucer until the steak absorbed all the seasoned flour. Then I fried in Mama's big old black cast iron frying pan until it was so tender you could cut it with a fork. Mashed potatoes, Pet Milk and flour gravy made from all those steak fryings left on the bottom of the pan was so good. The vegetable was Del Monte green beans cooked with a fresh chunked up tomato and a chunk of slivered onion...all cooked for at least a half hour. Yup...those were the days...gone but not forgotten. I'm wondering...Do you ever do meals for one person? I'd like to see your recipes or ideas for a couple of them. I don't eat meat anymore. Enjoy your cooking while you still can. Thank you for being you all these years.

We made these with the puff pastry, brushed the top with melted butter and after cooking, spread a confectionary sugar glaze. And our 5 year old grandson had fun rolling the crust! Thanks Paula Dean!

My Grams used to make fried pies. She stewed dried apricots for filling or made a chocolate filling, folded and pressed with a fork then deep fried....sooo good!!

My grandfather was a baker and he made fried pies at home and every morning he sent my Mom out to sell them. She was only 6 years old. She had to ride the bus too. That was in Little Rock Arkansas around 1930. Love from Iowa.

Mrs. Paula, I have a recipe idea.I'm sure people would have the stuff on hand currently.I make a spam(or ham) potato bake.Slice and par boil taders, drain.Slice and fry spam, drain.Make a white sauce with cheese (g+g is the best) nutmeg, s+p.Spray and layer dish.Sauce,tader, spam etc.Than bake covered till taders are cooked through.I know you probably do some version, is why not much detail.Like to add spinach and onions too. Get some veggies in.Is comfortable, yummy and can use what you have.Sounds crazy,but lots of people have bought spam but have never tasted or cooked with it before.They bought it for THIS current event but don't know what to do with it.Is not an everyday food but in the pantry for just this reason and can be a nice meal treat every now and then.Thank You and much love to you and yours.

My girlfriend and I tried to wait in line to neet you in Hagerstown, Maryland, some years ago but, we both are disabled and couldn't stand very long behind the hundreds of people already there. Seeing you again just made my heart so light. We have been making some of our backup pantry meals: Tuna Salad, Mackerel Patties, even some BBQ fried Spam. Sure have been glad that my Mama taught me to have some canned meats set back for "Just In Case" times.

I have an air fryer. I just cooked some coconut shrimp in it night before last. It was so good. I have made fried pies in it too and they turned out so good. I also cooked chicken stripe, okra, steaks, and other things. It saves on the calories and so much healthier. Thank you so much for your videos. I enjoy them so much. Have a blessed week.

My Grandmother would make these little apple turn overs that when fried ( IN LARD!) would get these crispy little bubbles on the out side that would pop and crush when you bit into them, they were the best and I have never to this day seen anything like them. That along with her home made ice was some of my best memories as a kid. Great videos by the way.

Hi Paula! I have a question. I have made your gooey butter cakes many times. It never comes out with the crispy top, like how you serve in your restaurants. My husband loves how the gooey butter cake has a crispy top at The Lady And Sons. Mine doesn't come out that way, it's soft. Any ideas? I love you and bless you for sharing these videos with us.

@@PNWShanaLee not sure. Her butter cake recipe is in her cookbook and I always follow the directions but it turns out different than what her restaurant serves. It calls for a cake mix, cream cheese, butter and other ingredients. I love it

Oil fried is definitely the best, but I don’t need the extra fats either! I tried baking these in the oven after brushing them with an egg wash and mine crisped up really well! 425 oven on a pizza pan that has slits in it so both sides crisped.

In Australia, if you don't live in the house, you shouldn't be there, so friends are out for now. I thought the heat from the cooking process would kill the virus. Checked an online medical news site regarding Covid-19 and they say it does, it's easy to kill with heat and you can also kill it with cold, so put food in the refrigerator. @@ChocolateDropTony Yes, I see your point there, but she is cooking for her immediate family. I had MRSA a rather nasty Staph infection after a 3 month stay in hospital and I had to take similar precautions and I was the cook at home, only used gloves if I cut my hands. I was fine after 3 years on mega antibiotics and no one caught it, but I still take precautions because I HAD it. I have never seen this lady before, she has a beautiful home that looks very clean but I did notice she put paper towel up to her face and then put it on the counter top..... not a good thing for sure and I agree anyone making cooking videos at this time, no matter who they are, should spread the word on extra cleanliness ...

With the puff pastry you can put them in the oven at 375 for about 20-25 minutes and they'll turn out great!

I remember a mushroom canape you made long ago for a date nite with Michael show using mushrooms, mayonnaise, canned fried onions and it was delish. I still make it to this day! It was so easy and good! Thank you from California! Karla

I bought some of your signature light brown nonstick bread pans and the first time I used them they discolored and I had to scrub them to get the black spots off but they still don’t look like they did. Please, could you tell me how to clean them to get them looking new again? Anyone? Please help!!!!!

Hello Miss Rose, Do you soak your julienned potatoes in water for about 30 minutes before using the fryer? After I soak them, I pat them with a paper towel. I use a little oil, maybe a tablespoon (or you can do like Miss Paula and use cooking spray) and coat them then put them in the fryer for about 20 to 25 minutes, according to your fryer. I think the key is using cooking spray or a little oil to keep your food from drying in the fryer.

I understand the whole being in your house and around your loved ones but still washing yours hands in the kitchen is essential. If this kitchen was a restaurant and you saw the cook do that you would be upset. I'm just saying this is a good opportunity to show good hygiene in the kitchen even if you are home amongst your loved ones

@@ChocolateDropTony I get where you are going but we need to be reasonable.... if you have the virus and are at home I doubt you are cooking anyway. We all know if you are cooking for people in a restaurant you are using precautions, we know if you are taking care of the sick that you should use precautions, we all have enough sense of knowing when we should use gloves. But if you are at home and are locked down and have been locked down and haven't been sick there isn't any reason to dick around with gloves in the kitchen. NO ONE DOES. Washing your hands is enough. Paula is in her kitchen with her friends and family and she is very clean. Lets keep it real.

Canned biscuits are such a great tool aren't they!!! You can make so many simple things with them. My boys love to cut them into quarters and toss in pizza sauce & add pizza topping & mozzarella cheese for Bubble Pizza. Thank you for sharing simple things that most of us do have or can get easy access too. Ps Glad you are sharing about the air fryers. So many people are raving about them now & all the uses. My friend cooks hot dogs in hers and they are wonderful.(And I am not a hot dog fan & I like those). Enjoying all your videos. Thank you for sharing.
