This is the follow up to my previous video on preparing meat and aging it properly. Once you are happy with your steak, this is the best way I found to cook in the pan, but can be applied to the grill just as easily.

Yeah, only cook with animal fats ever. I never touch plant oils

I pref duck fat, sometimes tallow and beef bacon grease .. yes yes there’s such a thing as beef bacon I buy from whole foods … have you tried cooking with other animal fats? Any noticeable difference ? Any preference ?

My mother has a supply of fresh lard she makes herself from the hogs she has butchered. My grandparents also done this back in the 80’s.

Ever since I found out about the Carnivore Diet, I've used butter, beef tallow, bacon grease that I saved from my breakfast bacon, and ghee...all add so much flavor to my beef, seafood, and eggs...once in awhile, chicken.

I never seem to have breakfast bacon. LoL but I use the grease I save from snack bacon! lol it’s made in the evening sometimes and I use grease next day for eggs and ground beef. Best there is! Stay safe

Great success! I did it exactly as you said, thick tomahawk steak, dry aging for two days, prepared it in ghee with four minutes on each side, rest for ten minutes. Perfect taste and the most tender steak I've ever had. Thank you for these easy to follow instructions.

@@1Hope4All That's right, just like he says, cover it roughly on all sides with salt and then put in the fridge with no cover and on a grate or (my favorite) on chopsticks that you laid across an empty bowl. Have fun!

Thank you for posting this sentiment. I feel the same way. Helps to not feel so alone. Everyone around me eats sugary snacks and deserts. Sure I guess they’re right. I could just have a bite. But justification leads to more and pretty soon the 40+ pounds I’ve lost are back and I never find out what I’m truly capable of. So thank you. Needed some moral support tonight.

I don't eat aged meat. Ageing meat starts a fermentation process which is good for flavour and texture for tender meat but a another result of this is the production of histamines in the meat which for someone like me with autoimmune disease is not a good thing initiating inflammatory response

You make your steaks pretty close to identically to the way I make mine. The only real difference is that I don't leave the steaks out for hours to warm, since I like them very rare in the center. Anyway, I can attest to your methods producing fantastic steaks every time.

One of the best steaks I ever had was an air fried ribeye. 7 minutes per side at 400°...only salt...medium rare.

When I do a Chuck roast...I do a reverse sear on it ..250° in oven till it reaches 140° internal temp...Then I pull out and deep fry...Rest 15-20 min...Like cotton candy!!

I'm not sure you know what a reverse sear is... You cook the steak in the oven, or on a lower temp in a pan. Then when cooked to your liking, you sear it in a HOT skillet creating a nice crispy crust. You do not deep fry it to get a sear. While deep frying adds it's own level of goodness, it's not the same.

Using a real time internal temp thermometer is really helpful as well. There's something about seeing that internal temp of the steak from right out of the frig all the way to when it is done resting. Especially, if you dont have a great feel yet for your stove or grill. All but guaranteed to hit that perfect temp every time.

I used a sous vide precision cooker for thick cuts. They give you the perfect temp edge to edge. Just remember to let them rest before searing. Also is nice for meal prep because all you need to do is sear them out of the fridge.

The problem I have , living in a cold house in England, Uk . Leaving meat out to rest for anything more than a few minutes it’s then cold. My boyfriend doesn’t like cold meat . .. we’ve been eating slow cooked stewed meat because he only likes meat tender and hot.

Yeah crazy right? Dolly reason I knew was because I had friends when I was a teenager who played and got me into it. But yeah we had a rugby team since the 1960's and it was one of the top teams in North America since the early 90s. I myself have played with them since 1997. And now we are two time MLR Champions. We play it Starfire stadium in Tukwilla, so you should go check them out sometime!

and if you have a cast iron or carbon steel frying pan, that will work really well too. (Non-stick pans can get scratched up, and I'm not sure that whatever the non-stick coating is does well with extremely high heat. I keep mine for eggs, and things that do better with more gentle treatment.)

@@6foot8jesuspilledpureblood82 Cast Iron pans are a no-no since the leaching of iron is consumed and absolutely destroys the mitochondria. I believe thats one theory for cancer, ergo they are carcinogenic.

This aging of them on racks for so long is fascinating ! We are told they turn green in a week. My tiny freezer is always full for that reason. I will have to try this ‘! Thank you

Maybe it's the steak but if I buy a steak from the store (single steak) they turn black after a day/two still in packaging. Is it because they were not salted?

​@@davidallan4901 It's because they are still packaged. Remove from package, pat dry with paper towel, place on drying racks over sheet pans so that each steak has full air ventilation on all sides. 👍

I like searing the edges in hot butter, plenty of salt, fry both sides, take out, slice into strips, more butter in the pan and fry in butter for 30secs. Then tip the contents in a bowl and use the butterery juices as a dip.❤

It’s super easy to cook a 2 inch thick steak! They 1 inch steak is three times harder to cook properly! And medium rare is basically impossible on a 1 inch steak! What are the best ways I’ve found to flavor your steak is to bast it with a couple of springs of rosemary Into the oil! Another thing to mention is when you have that much oil or butter in the pan it’s very important to have a good grip on your steak as you turn it over as I’ve gotten bad burns in the past when it splashes into a pool of molten butter

Love your videos Dr. Chaffee! I was raised in the 80s and my mom only cooked lean meat. Now I’m moving towards exclusively eating protein. Lost my gallbladder after my low-fat vegan spell (encouraged by many naturopathic docs). 😔 One thing I have trouble with is eating the fat. Any tips for those of us who lost our gallbladder? All I know is eating carnivore gives me energy and a clear mind! Thank you for sharing! ❤

Hi,I also don’t have a gallbladder.I’ve started to take enzymes ,betaine .After about 2 hour after meal I then take ox bile! I’m a fellow carnivore,this helps to digest the fats! Dr Berg is great at explaining details.He’s also on you tube!

I’ve gotten good results from a cold start. Cold steak in a cold pan, set to high heat and fry for two minutes on each side. Turn the heat down to medium-low and flip every two minutes, adding butter along the way for basting. At the end, there’s much less splattering to clean up and the results are good.

I have an inverter microwave so I use it to bring the steak to room temperature using the lowest or defrost setting.

Hey Dr. Chaffee, time to get a cast iron pan. That non-stick just isn't good for you. Cast iron takes only a little more work for cleanup and upkeep but well worth it.

There are definitely cheaper cuts available so you don't have to go for a ribeye but if you think about nutrient density it's actually much cheaper than things like spinach or other fruits and vegetables. And it tastes better.

Look for sales and stock up. Fred Meyer here in Oregon has a sale on Ribeye Roast at $4.97 a pound. I buy the whole Primal roast and cut it up myself. They also run a sale often on Petite Sirloin steak at $3.99 a pound. They cut them thick. Especially around the holidays. They have Ham for 77 cents a pound. I won’t buy them because it says natural flavorings added to add weight?? What the hell is natural flavoring? Anyway good luck.

I use beef tallow now instead of ghee and they taste even better and seem to make a slightly better crust.

Thank you Doc for sharing this, I’m going to try it. I’m curious when you mentioned wet aging in the big Costco bag, how long do you wet age for ? And after you decide it’s been long enough, then do you cut them into steak and salt them-dry age them- before cooking ? Pardon my ignorance ☺️ Also regarding salting chicken, I’m always weary about chicken with all the high temp cooking required. How long do you keep raw chicken with salt before you cook it ? Do you keep it in the fridge or out? Can you make a chicken prep-cooking video pretty please . While I’m not a big poultry eater it would be nice to know how to do it right Thank you you so much .. all this talk of steak has got me hungry it’s barely 8:30am… do you usually eat breakfast or just lunch and dinner or just when hungry?

Do you have a video on how you prepare your meats? How you saw them how long you keeping in the refrigerator after you saw them after you saw them Then do they stay good past the date on the package? Do you just put them in the refrigerator like they are your video or do you put them inside something I container or wrapped them?

I didn’t catch what type of loin you purchased from Costco on your dry aging video. Sounded like you said pull loin? Is that like a sirloin or more of a ribeye? It looked fattier than sirloin. Thanks for your videos. Learning a lot! Feel so much better on Carnivore OMAD! Is it ok to cook the steak in butter vs ghee?

Hey Dr. Chaffee, quick questions for clarification. You don't have to trim anything off of the steaks before cooking? How long can you leave them in the fridge and then just pull out and cook? And lastly, how do you prepare ground beef? You don't keep it in the fridge as long as steaks, right? Thank you for the help!
