Quick & Easy Blueberry Muffin Recipe With Crunchy Streusel Topping! | Cupcake Jemma

Blueberry Muffins...sounds too easy right? Well, what's wrong with that? Sometimes easy is exactly what you need and over complicating your bakes is the last thing you want! So I give you The Blueberry Muffin with Crunchy Streusel Topping. These are the perfect quick, simple and delicious treat for when you just need to get your bake on!

Ingredients -
For the Streusel Topping...
45g plain flour
2 tbsp demerara sugar
2 tbsp melted butter
1/4 tsp cinnamon
pinch of salt
For the Muffins...
2 lg eggs
320g buttermilk
70g oil
70g melted butter
270g plain flour
135g caster sugar
65g soft brown sugar
1.5 tsp baking powder
zest of half a lemon
150g frozen blueberries

Cupcake Jemma's recipes never fail me! Love that they are in grams which makes making them a breeze with minimal dish dirtying so less clean up. I have made her chocolate cupcakes and cinnamon rolls and they came out perfect so I am excited to try this out now!

OK, Jemma!! These were amazing. For real life, the BEST blueberry muffin I've ever had. I didn't have buttermilk so I use plain Greek yogurt. Absolutely amazing! 🫐🫐🫐

I’ve been making these for a couple months now, love it!!! But I haven’t been following to a tee- I was making my own buttermilk, definitely not the same! I finally found store buttermilk and wow what a difference in texture! And the lemon zest is 100% necessary...yummm!! Not a fan of lemon, but it adds a nice ting to it- absolutely love it 😊 thank you! (And Jemma I am from US and we love the way you say blueberry 🤣)

I used to get these beautiful blueberry muffins from a shop when I lived for a bit in Hong Kong, and I can almost imagine the streusel you added would have made those such an even tastier treat! And you are right, lemon and blueberries really go well together! 🤤🤤🤤 now I want a muffin..

This recipe looks like my favorite blueberry muffins type. Definitely going to try this recipe. I find that the easier the recipe the better. I mean some recipes are so tricky that unless you're a Michelin level chef/baker, you won't be able to do them.

Ingredients For the streusel topping... 3/8 cups plain flour 2 tbsp Demerara sugar 2 tbsp melted butter 1/4 tsp cinnamon Pinch of salt For the Muffins 2 lg eggs 1 1/3 cup buttermilk 1/3 cup of oil 5 tablespoons of melted butter 1 7/8 cups of flour 2/3 cups of caster sugar 1/3 cups of soft brown sugar 1 & 1/2 tsp baking powder Zest of half a lemon 150 grams of blueberries- these were so good!:)
