Quinoa may be a nutrient packed powerhouse, but seeing it as a Superfood may be unhelpful.

Thank you, Dr. Chan. I have a standard breakfast that I eat every single day. I soak 1/4 c. quinoa for 30 minutes, rinse it then cook it for 15 minutes. I then add 1 c. of home-cooked black beans prepared with no salt, 3 T hemp seeds, 2 T ground flax seeds, 1 t. Chia seeds that have been soaked in 2 T of organic olive oil with a dash of cayenne pepper, add 4 T. collagen peptides, and mix it all together. But then still I am not done! I am from Texas you know so this country girl needs a BIG breakfast. Ha, ha I add 2 poached eggs on top. I love grits but don't eat them anymore so I started substituting them with quinoa. To me, it is delicious and very filling. I don't eat again until I am hungry. I might have just a piece of broiled chicken or some protein. If I get hungry later for an afternoon snack, I steam a cup of broccoli cauliflower and carrots and eat it with my fingers as a snack. I know that sounds weird but it soothes me to sit in front of the tv and mindlessly snack on them instead of potato chips. Later around 5 or 6 pm, I eat a peeled Granny Smith apple and 1/4 c of soaked and roasted walnuts and 2 Brazil nuts. Haven't lost much weight, but I have been able to go off my blood pressure meds. I LOVE QUINOA! I also like red lentils and make red lentil flat bread sometimes and use them instead of tortillas. I scramble 2 eggs and mix them with quinoa and wrap that in the lentil tortilla. I make refried black beans with sautéed chopped onions and chopped garlic and add in the hemp seeds, ground flax seeds, collagen peptides. That is my other tasty country breakfast. I am a 69 y.o. widow and have lots of chores to do on my little homestead. A big breakfast is key for me. I try to do a 24 hr. fast once a week. So far, I feel pretty good for an old lady and yes I know that I am eating like a farm hand because in a way, I am! What do you think? I used to weigh 238 lbs for over 20 years. I am down to 160 and hoping to drop another 20 by January. Got to have goals! Thank you for all your hard work and information.
