@@throwaway1270The comment you're replying to seems to have been deleted but seafood boils are definitely not exclusive to the cuisine of southern blacks if that's what you meant. They originated in the French colony of Acadia. When the Acadians were expelled from New France by the British, many ended up in places like Massachusetts and Maryland where clam bakes and crab boils are a major part of their respective regional cuisines. A lot of those Acadians also ended up in Louisiana so the basic technique comes from them but other cultures have certainly added their own elements to it!

One mistake I see everyone make when boiling crawfish, is they actually Boil the crawfish. You don’t boil the crawfish or shrimp. Once the water comes to a boil you shut it off and dip your crawfish in. Let them sit and absorb the flavor. There’s no need to let the water continue to boil, the crawfish cook very quick.
