The male singer of the first opening you watched "Daddy Daddy Do" is called Masayuki Suzuki and is known in Japan as the "King of Love Songs" he's an incredible artist and I really do recommend checking out more of his work. The show is also a romcom so he perfectly fits the vibe they're going for.

I actually started watching Dr. Stone recently because of all the reaction thumbnails I’ve seen, and let me tell you it is worth the watch! It’s a show that feeds my craving for a strategy anime that you need to use your brain for. Definitely one of my favorites now! If you decide to watch it, it may be a bit hard to keep your head wrapped around sometimes, but it is definitely worth it in the end.

The band that did the opening for Dr. Stone, BURNOUT SYNDROMES is absolutely great! They also did openings 4, 5 and 6 for another anime called Haikyuu, and I really recommend checking out all the openings from that one, they are amazing!

One of my favorite anime outros is the blood blockade battlefront outro, its really catchy and has a great animation sequence

I'm a little late but I highly recommend the Re:Zero openings and endings. I know that you've already seen the first one, but the rest are all top tier. Re:Zero's music is honestly on another level, and it plays a huge part in why it's my favorite anime.

One of the reasons I love Japanese music so much is that it tends to throw all conventions out the window. In western music we have defined genres and people stick to those genre's which is the reason why so many songs basically use similar notes and patterns Ed Sheeran actually did a thing where it played songs and pointed out how all these songs can easily be replicated because they all use similar notes and patterns. But with Japanese music a lot of then ignore conventions and create their own genre's and unique sounds or they blend multiple genre's together in very unique ways allowing songs to sound very different from one another. They also have a lot singers with very unique voices and they do a lot of interesting things with their voices further making them stand out from western songs and singers. Of course there still is a lot of cases with similar sounding songs but there's still so much more variety and uniqueness compared to the majority of western music.

You should check out Banana Fish op 1 and Ranking of Kings op 2. They are amazing

Beastars - Wild Side is pretty great :) The visuals are done in stop-animation which is pretty unique for an anime opening.
