“Another great Q&A Gary! I have a question for you. I've done very very little dutch oven cooking but something that I'm really intrigued by and would like to do more of on camping trips and such. I'm wondering if there is a formula that you go by for a certain size dutch oven verses how many charcoal briquets to place under it and on top of the lid for a desired internal temperature of the dutch oven. I've watched videos on this, and they pretty much tell you how many to use for the size dutch oven they are using for a certain recipe like dutch oven pizza, but never really explain why, such as desired temp inside the dutch oven, and what difference placing one less or one extra will do to the cook. I would like to know how to set up any size dutch oven with the proper amount of charcoal to reach a desired temp or close proximity. Thanks Gary, and really great seeing you post videos again :D

Regarding the use of lettuce or cabbage instead of seaweed (@5:05)...The average salinity of sea water is around 3.5%, which supposedly yields 1/2 to 3/4 c salt per gallon of water. Adjust that back to a ratio of 2 to 2.5 tablespoons salt to 1 qt water.

Hey Russ, Here is a link for you to get an idea on temps. It is just a guide for you to use to get started. Here in Alaska and since I'm used dutch ovens I rarely use the recommended coals. I always end up using less cause the D.O. retains the heat once hot. Note: If you're going to use briquets this is a decent guide however, if your going to use the coals from the fire pit now that is going to be more tricky and I have done both. I prefer the fire coals as it adds a smokey flavor. However the rule of thumb to remember is to keep extra fire coals as you'll need them. Note 2: Route every 10 to 15 minutes quarter turn. Both the lid and oven in opposite directions for even cooking. Also for direct camp fire cooking it is best to get a trivet to keep the D.O from touching the coals. Less likely to have burnt food. Like anything trial and error but you'll get the hang of it. Dutch Ovens since it is cast iron. It will heat up quick and retain the heat longer. So keep an eye out on your food and rotate the lid and oven. If you have to take the oven off and lid off to let it cool down a bit. Then place back on the fire pit and keep cooking. It will take some getting used to but it is worth the flavor in the end. Here is a simple recipe you would enjoy. I cook this all year around outside no matter what the weather is outside and yes even at below zero. Dutch Oven Peach Cobbler Dump Cake Ingredients: 2 (16 ounce) cans peaches in heavy syrup 1 (18.25 ounce) package yellow cake mix 1/2 cup butter 1/2 teaspoon ground cinnamon, or to taste * Gluten Free option: Betty Crocker Gluten Free cake mix is available at most grocery stores. Extend cooking time by 10-15 minutes for this mix. Directions: * Line a 12″ Dutch Oven with heavy duty foil or Dutch Oven liner * Pour peaches into the bottom of one Dutch Oven. Spread evenly. * Sprinkle peaches with cinnamon * Pour the dry cake mix evenly over the peaches. Do not stir. * Cut butter into small pieces and place on top of cake mix. * Sprinkle top with cinnamon. * Place lid on Dutch oven and bake using 8-10 briquettes bottom and 14-16 briquettes top for 45-60 minutes rotating oven and lid 1/4 turn in opposite directions twice through the baking process. scoutingmagazine.org/2016/08/dutch-oven-cooking-primer/ Good luck Russ and happy Dutch Oven Cooking.
