Great Q&A Gary! I totally agree with you on the lump vs the briquets. The only time I use lump is in a kamado style cooker where it is much more forgiving, and that also happens to be what is recommended by the manufacturers for ceramics. I use to try to use lump in a Weber kettle, and man it burned up so fast compared to briquets and temps were inconsistent for the reasons you mentioned in this video. Sorry I wasn't able to tune in last night, but looking forward to the next one. Cheers Gary!

Separating the charcoal into 2 piles has never worked for me, especially if I use charcoal baskets. My theory (uneducated, of course) is that one pile might be robbing all of the oxygen causing the other pile to smother. Even after I threw out both of the baskets, the same thing happens! Weird, huh?
