I use my Nuwave Bravo XL and Nuwave convection cook top to reverse sear. Season steak, use temp probe w/ Bravo XL cooking to 120 degrees internal. Rest 5 minutes, while heating searing pan. Sear 4 minutes or so on each side on the Nuwave convection burner. Butter baste, add herbs etc. Perfect mid rare.

Thank you for making different foods in your oven. I just got mine and so far made toast. I used the oven also for a casserole and it cooked fast and delicious. I’m going to try a pork chop today. I hope it turns out. I like rare steaks so I’ll sear fast I think. Idk. It will be an experiment. I noticed you don’t preheat for sear. I’m still having my issues knowing how to set it.

I can't believe how much your videos have helped me.. in deciding to buy the Nuwave Bravo, and how to use it. Much appreciated, but I have two questions: #1 Latex gloves... in your own kitchen? Do you have botulism microbes on your skin? What do you know that we dont? #2 Are you the CEO of Nuwave? Perhaps VP of Marketing? My two questions are mostly rhetoric but I do have a curious mind

That was a nice video. You showed me that the rack rack system could you use some modifications or improvement it seems very clunky and unstable. Pretty complex operation. The NuWave uses only two quartz elements on top, so you need to rotate the pan for even cooking. Grab the broiler pan . . . don't rely on the sliding grates. A $12 rib eye that thick should be set to 125 deg on the probe for Medium Rare. Just probe one steak and rotate so they all rely on the one probed steak . . . sear first in a skillet. All said and done, a good iron or carbon steel will sear quickly and easily . . . set up your baste . . . cover with a lid and shut off the pan to reach desired doneness . . . much simpler and less cleanup. But, finishing off in the NuWave is pro quality. I just did a batch of Brussels Sprouts. 350 on Roast for 25 minutes, but I cooked chopped bacon and seared the sprouts in a skillet first before moving to the NuWave.

Man, just get a cast iron skillet or grill. Heat it in the oven to 410 put a little oil in the pan put it on the stove on med to high season the meat w S+P and sear 5 minutes a side and put it in the oven to finish. It will have a wonderful brown crust with an intense beefy flavor. That cast iron pan or grill will cost under $50, needs occasional seasoning (watch one of the dozens of videos to learn about it) and care but will last a lifetime and will get better the longer you use it. I love my Lodge 13 1/4" skillet and their reversible 2 burner grill/ griddle. There ios no substitute for the old cooking tools our parents and grandparents used like cast iron and pressure cookers. Don't even get me started with those insta pots...

when you cook steak, you want an intense sear to get that maillard reaction. But when you do this, you'll get spatter, and mucho spatter that hits the top (ceiling) of your oven. For a conventional wall oven, that's not a big deal. Self-cleaning mode will take care of the mess. For a counter-top oven, it is a huge deal. So until they come out with a self-cleaning counter-top oven, just do steak either on your stove or in your conventional wall oven.

@@WaveOvenRecipes , I saw your video demonstrating how to clean the Bravo XL, and didn't see a whole lot of wiping on the topside. The top and bottom of the toaster oven has always been the toughest for me to wipe because of the heating elements getting in the way. Extra bad if the heating elements have heat spreaders over them. I think that, the way you wiped it, you probably need to do he cleaning after every use, and that makes you a much better man than me! I can't be bothered to wipe the inside of my toaster oven that often. By the way, I really appreciate the time you've taken to make these videos. Definitely wish I watched them before I bought my XL. I would have bought a different oven if I did. Maybe the Breville or the PowerXL, which you seemed to like better. Given that I only buy a toaster oven an average of once every 15 years, price is almost no object for me.
@WaveOvenRecipes

I do clean after every use. The heating elements are going to kind of self clean things to a degree. It gets all off the heating elements during use and the top stuff will mostly burn without building up. If you clean some every time. Doesn't have to be perfect, but some cleaning.

I have both this unit and the power airfryer oven, and I have made steaks in both. That being said they both do a good job and take about the same amount of time, but my first time doing steaks in the Nuwave and I was a little disappointed. The Nuwave seems to lack the ability (at least using the sear option) to get the outside of the steak done correct. However, I will say the steak was nice and juicy, easy to cook and only took about 20 min for 3 of them. The Nuwave is hands down the better all around oven because the Airfryer Oven tends to dry things out when you just want to cook or reheat things. The Nuwave with all the options and settings gets used almost every day in my house and we only need the microwave about once a month. Maybe the author of the video has some more tips for getting the steak a better sear since posting the video, but I think in the future I will be using my Airfryer oven for steaks.
